Ingredients

For the Center

  • 1 cup natural creamy peanut butter
  • 1/4 cup 100 % pure maple syrup
  • 2-3 pitted medjool dates

For the coating

  • 3/4 cup dark chocolate chips
  • 2 T milk of choice

Instructions

  • In a food processor, finely chop the pitted medjool dates by pulsing several times, then running until small, uniform pieces are formed.
  • Add the natural peanut butter and maple syrup to the food processor. Process until the mixture becomes thick, smooth, and all ingredients are evenly combined.
  • Roll the peanut butter mixture into balls of your preferred size and shape (e.g., small spheres for truffles, slightly larger for Buckeyes, or flattened ovals for Easter eggs). Place them on a plate or tray lined with parchment paper.
  • Place the parchment-lined dish with the peanut butter shapes into the freezer for approximately 30 minutes to firm up.
  • For the Coating: Prepare a double boiler. Fill a small saucepan with about an inch of water and bring it to a gentle boil. Place a heatproof glass bowl (make sure it doesn’t touch the water) on top of the saucepan. Add the dark chocolate chips and milk of choice to the bowl. Stir constantly until the chocolate is completely melted and smooth.
  • For Truffles: Remove the chilled peanut butter balls from the freezer. Roll each ball into the melted chocolate, ensuring it’s fully coated. Place the chocolate-covered truffles back on the parchment paper. Let them set in the refrigerator for about one hour, or return them to the freezer for quicker setting (about 15-20 minutes).
  • For Buckeyes: Using a toothpick, gently pick up a peanut butter ball by poking it slightly off-center. Dip the bottom half of the ball into the melted chocolate, leaving a small circle of peanut butter exposed at the top. Carefully place the partially dipped Buckeyes back on the parchment paper. Allow them to cool and set in the refrigerator or freezer as needed.

Notes

Updated Version/Alternative Texture: Instead of dates, you can add 2-3 tablespoons of flour (oat flour or all-purpose) to the peanut butter. Add a couple of tablespoons of maple syrup and stir until it reaches a thick consistency that you can easily roll into balls. You may want to freeze them for about 15 minutes before rolling to make them easier to handle.
For Easter Treats: I’ve successfully rolled these into balls and then gently flattened them to create egg shapes. They were absolutely perfect for a festive Easter dessert!
