Why Air Fryer Buffalo Cauliflower is a Game Changer
For years, buffalo chicken wings have reigned supreme as the quintessential game-day snack and party appetizer. However, if you’re like me and have never been a huge fan of traditional wings, or if you’re simply looking for a healthier, plant-based alternative, then this Air Fryer Buffalo Cauliflower recipe is about to revolutionize your snack game. I truly prefer these crispy, battered cauliflower bites over any chicken wing, and I’m confident you will too!
The magic of the air fryer transforms humble cauliflower into something truly extraordinary. It creates an incredibly satisfying crunch on the outside while keeping the inside tender, all without the need for excessive oil or deep frying. This method results in a significantly lighter dish that doesn’t compromise on flavor or texture. After experiencing how wonderfully crispy and delicious the air fryer made my Buffalo Potatoes, I knew cauliflower was the next perfect candidate for this treatment. It’s one of my all-time favorite vegetables, and it truly shines in this buffalo rendition.

Essential Ingredients for Your Crispy Buffalo Cauliflower
Crafting the perfect Air Fryer Buffalo Cauliflower starts with selecting the right ingredients. Each component plays a crucial role in achieving that desirable crispy texture and iconic spicy-tangy flavor. Here’s a detailed look at what you’ll need and how to make smart substitutions:
- Cauliflower: The star of our show! Always opt for fresh, raw cauliflower. Its firm texture is essential for achieving a good crispness in the air fryer. Avoid using frozen cauliflower, as it tends to become too soft and watery, leading to a soggy result. Chop your cauliflower into uniform, bite-sized florets to ensure even cooking. If you need some guidance on how to cut a cauliflower efficiently, there are plenty of helpful resources available online.
- All-Purpose Flour: This forms the base of our crispy batter. Standard all-purpose flour works beautifully. For those following a gluten-free diet, a 1:1 all-purpose gluten-free flour blend can be seamlessly substituted without affecting the texture or flavor significantly. Ensure your chosen GF blend is suitable for baking and frying.
- Milk: I typically use whole milk for its richness, which contributes to a slightly creamier batter. However, any dairy-free milk alternative, such as almond milk, soy milk, or oat milk, will work just as well, making this recipe easily adaptable for vegan diets. Choose an unsweetened variety to avoid altering the savory balance.
- Spices: A simple yet effective blend of paprika, garlic powder, salt, and black pepper infuses the batter with foundational flavor. For an intriguing smoky depth, consider swapping regular paprika for smoked paprika. If you crave an extra kick of heat, a dash of cayenne pepper can be added to the batter to complement the buffalo sauce.
- Hot Sauce: Frank’s Red Hot is my absolute go-to for its classic buffalo flavor and perfect balance of heat and tang. It’s widely available and delivers consistent results. While I haven’t found a direct substitute that captures its unique profile perfectly, feel free to experiment with your favorite hot sauce if you have one. Just be mindful that the flavor and heat level might vary.
- Butter: Melted butter is crucial for creating that rich, glossy, and flavorful buffalo sauce. I usually opt for unsalted butter to better control the overall sodium content, but salted butter can also be used. For a dairy-free or vegan version, a plant-based butter substitute works wonderfully.
- Honey: A touch of honey adds a subtle sweetness and a lovely tang to the buffalo sauce, balancing the heat of the hot sauce beautifully. It creates a more complex and rounded flavor profile. If you’re aiming for a strict vegan dish, you can omit the honey entirely or use maple syrup as a plant-based alternative, though the flavor will be slightly different.

Step-by-Step Guide: Crafting Your Air Fryer Buffalo Cauliflower
Making these irresistible buffalo cauliflower bites is incredibly straightforward. Follow these steps for perfectly crispy, saucy results every time:
- Prepare the Batter: In a medium-sized bowl, whisk together the dry ingredients: flour, paprika, garlic powder, salt, and pepper. Gradually add the milk to the dry mixture, whisking continuously until you achieve a smooth, lump-free batter. The consistency should be similar to pancake batter – thick enough to coat the cauliflower, but not overly gloopy. If it seems too thick, add an extra tablespoon or two of milk at a time until you reach the desired consistency.
- Coat the Cauliflower: Add your fresh, bite-sized cauliflower florets to the prepared batter. Using a spatula or your hands, gently toss the cauliflower to ensure every floret is thoroughly and evenly coated. You want a thin, uniform layer of batter on each piece for optimal crispiness.

- Air Fry the Cauliflower (First Round): Preheat your air fryer to 380°F (195°C). Lightly spray the basket of your air fryer with cooking oil to prevent sticking. Arrange the battered cauliflower florets in a single, even layer in the air fryer basket. It’s crucial not to overcrowd the basket, as this can steam the cauliflower instead of crisping it. If necessary, work in multiple batches. Air fry for approximately 15 minutes, making sure to flip or toss the cauliflower halfway through cooking (around the 7-8 minute mark) to ensure even browning and crispiness on all sides. The cauliflower should be golden brown and tender-crisp.

- Prepare the Buffalo Sauce: While the cauliflower is cooking in the air fryer, prepare your buffalo sauce. In a small microwave-safe bowl or saucepan, melt the butter. Once melted, whisk it thoroughly with the hot sauce and honey until well combined and smooth. This creates that classic, rich, and spicy buffalo flavor.
- Toss and Air Fry (Second Round): Once the battered cauliflower is beautifully golden and crisp from its first air-frying session, remove it from the air fryer. Transfer the crispy florets to a clean bowl and toss them with about two-thirds of the prepared buffalo sauce. Ensure each piece is generously coated. You can also use a pastry brush to spread the sauce evenly over each floret if preferred.
- Final Crisp: Return the sauced cauliflower back to the air fryer basket in a single layer. Air fry for another 4-5 minutes at 380°F (195°C), or until the sauce is slightly caramelized and the cauliflower reaches your desired level of crispiness. Keep a close eye on it during this stage, as the sauce can go from perfectly crisp to burned very quickly due to its sugar content. Checking every 2 minutes is a good practice.
- Serve Immediately: Remove the Air Fryer Buffalo Cauliflower from the air fryer. Serve these fiery and flavorful bites immediately with your favorite cooling dipping sauces, such as Ranch or Blue Cheese dressing, and a side of fresh celery sticks or carrot sticks for a refreshing crunch. Don’t forget to offer the reserved buffalo sauce on the side for those who crave an extra kick!

Expert Tips for Perfectly Crispy Air Fryer Buffalo Cauliflower
Achieving restaurant-quality buffalo cauliflower at home is easy with a few insider tips. Here’s how to ensure your dish is a resounding success:
- Uniform Florets are Key: When chopping your cauliflower, aim for pieces of similar size. This ensures that all florets cook evenly, preventing some from burning while others remain undercooked. Smaller, denser pieces will cook faster than larger ones. If you notice some pieces cooking quicker, you can remove them and set them aside until the rest are ready for the buffalo sauce.
- Don’t Overcrowd the Basket: This is arguably the most crucial rule for air frying anything to crisp perfection. Overcrowding leads to steaming instead of frying, resulting in soggy cauliflower. Cook in batches if your air fryer is on the smaller side. Each batch should have a single layer of cauliflower with a little space around each piece for proper air circulation. Don’t be afraid to shake the basket a few minutes into cooking to redistribute the florets as they shrink slightly.
- The Second Fry is Crucial: The initial air frying step cooks the cauliflower and crisps the batter. The second air frying, after tossing with the buffalo sauce, is where the magic truly happens. It helps the sauce adhere and caramelize, adding an extra layer of crispiness and intensifying the flavor.
- Watch for Burning After Saucing: Once you’ve added the buffalo sauce, the cauliflower can go from perfectly crisp to burned very quickly, especially due to the sugar content in the honey (if used) and sometimes the hot sauce itself. It’s vital to keep a very close eye on it during this final stage. I recommend checking the cauliflower every 2 minutes and tossing it gently to ensure even cooking and prevent sticking or burning.
- Reheating for Best Results: Leftover buffalo cauliflower can be just as delicious as freshly made! To reheat, simply place the cauliflower back into the air fryer at 350°F (175°C) for about 3-5 minutes, or until it’s heated through and has regained its crisp texture. Avoid microwaving, as it will make the cauliflower soggy.
- Adjusting the Heat: The heat level of your buffalo cauliflower is entirely customizable. If you prefer a milder flavor, use a hot sauce with a lower Scoville rating or reduce the amount you use. For those who love intense heat, consider adding an extra dash of cayenne pepper to the batter or a sprinkle of red pepper flakes to the sauce.

By: Lorie Yarro

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4
Ingredients
- 4 c cauliflower florets (raw), about 1 head of cauliflower
- 1/2 c flour
- 3/4 c milk, regular or dairy free
- 1 tsp garlic powder
- 1/2 tsp paprika
- 3/4 tsp cracked pepper
- 1/2 tsp salt
- ½ c hot sauce, we use Frank’s Red Hot
- 3 T butter, melted
- 1 T honey
- Ranch or blue cheese, for serving
Instructions
- Chop the cauliflower into bite-sized florets. Add to a medium bowl. Whisk together the flour, milk, garlic powder, paprika, salt, and pepper. Add the milk and whisk well until smooth. Pour the batter over the cauliflower and toss to coat evenly.
- Preheat your air fryer to 380°F (195°C). Spray the air fryer basket with oil and add the battered cauliflower in a single layer. Heat for 15 minutes, tossing or flipping halfway through, until the batter is golden and crisp. Cook in batches if necessary to avoid overcrowding.
- While the cauliflower is heating, melt the butter and whisk with the honey and hot sauce. When the cauliflower is golden brown and crispy from its first fry, toss it with 2/3 of the buffalo sauce. Place the sauced cauliflower back into the air fryer and heat another 3-5 minutes until crispy. Check it every couple minutes so as not to burn it.
- Remove from the air fryer and serve immediately with your favorite Ranch or Blue Cheese dressing and celery sticks. Offer the reserved buffalo sauce on the side.
Notes
- To reheat this air fryer buffalo cauliflower, place it in the air fryer and heat for about 3-5 minutes at 350°F (175°C) or until heated through and crispy.
- The size of the cauliflower florets can cause the cook time to vary slightly. Smaller or less dense pieces will likely cook more quickly. You can remove cooked pieces and set them aside until the rest are ready for the buffalo sauce.
- Once you add the buffalo sauce, keep a close eye on the cauliflower. It can go from perfectly crisp to burned quickly due to the sugar in the sauce. Try to check it every 2 minutes during the final air frying step.
- If you have a small air fryer, you will want to work in batches. Ensure there is one even layer with a little space between pieces for optimal crispiness. You can shake the basket a few minutes in to space them out as they cook down.
