  • 1 lb ground turkey (preferably 85% lean)
  • 1 medium red onion, diced
  • 1 jalapeño (or milder green chile), diced small
  • 3 garlic cloves, minced (divided)
  • 1 can black beans (approx. 14.5 oz), drained and rinsed
  • 2 – 2½ cups tomato sauce
  • 2 tsp cumin
  • 2 tsp chili powder
  • ¼ – ½ tsp crushed red pepper flakes (adjust to taste)
  • ¾ tsp oregano
  • ½ tsp black pepper
  • ½ tsp sea salt
  • 2½ cups shredded Colby Jack cheese (or your favorite shredded cheese!), plus more as desired
  • 8-10 tortillas (6-8 inch, flour preferred)

  4. In a separate medium bowl, combine the tomato sauce, the remaining 2 minced garlic cloves, chili powder, cumin, red pepper flakes, oregano, sea salt, and black pepper. Stir well to combine, forming your enchilada sauce.
  5. Grease a 9×13 inch baking dish or a large casserole dish. Pour about ½ cup of the prepared enchilada sauce into the bottom of the dish, spreading it evenly.
  6. In another separate bowl, combine the cooled cooked ground turkey mixture, the rinsed black beans, and ½ cup of the enchilada sauce. Stir everything thoroughly to ensure the filling is well mixed.
