- 1½ c shredded Monterey Jack cheese, or your favorite cheese
- 1 c black beans, rinsed
- 1 c corn
- 2 roma tomatoes, diced
- 2 Green onions, sliced
- 1 Jalapeño (optional, thinly sliced)
- 1/3 c chopped Cilantro
- Sour cream or Greek yogurt (for serving)
Instructions
- Preheat oven to 425°F (220°C). Rinse and slice sweet potatoes into ¼ inch rounds (thinner for extra crispy potatoes). Toss with olive oil and spices to coat evenly. Arrange on a parchment-lined sheet pan, ensuring none are touching if possible (you may need two pans).
- Bake for about 20 minutes, flipping the sweet potatoes halfway through, or until edges begin to get crispy and centers are softened.
