Essential Recipe Ingredients for Perfect Crostini
Crafting the perfect Cranberry Brie Crostini begins with selecting high-quality ingredients. Each component plays a vital role in achieving that incredible balance of flavors and textures that makes this appetizer truly special.
- Baguette: The foundation of our crostini! A fresh, crusty baguette is absolutely essential. Look for one with a firm crust and a soft, airy interior. Slicing it thinly, about ½ to ¾ inch thick, ensures the perfect bread-to-topping ratio and a delightful crispness after toasting. The quality of your baguette directly impacts the final texture and enjoyment of the crostini.
- Brie: The star of the show for its creamy indulgence. Choose your favorite brie cheese; for an elevated experience, a high-quality brie from a specialty cheese market will make a significant difference. Look for a brie that is ripe – it should yield slightly to gentle pressure and have a rich, earthy aroma. The brie’s smooth, buttery consistency, which melts beautifully, is key to the dish’s luxurious feel. Ensure it’s at room temperature before slicing for easier handling and more even melting.
- Olive Oil: A good quality extra virgin olive oil is ideal for brushing the baguette slices. It not only helps the bread toast to a golden crisp but also imparts a subtle, fruity flavor that enhances the overall taste. Choose a mild to medium-bodied olive oil that won’t overpower the delicate flavors of the brie and cranberry.
- Cranberry Chutney Ingredients: This vibrant chutney is what truly sets our crostini apart. Its balance of sweet, tart, and spiced notes is simply divine.
- Cranberries: Fresh cranberries are highly recommended for their bright, intense flavor and ability to break down beautifully during cooking. If fresh are out of season, frozen cranberries can be used directly from the freezer without thawing, though dried cranberries are not suitable as they won’t provide the same texture or moisture.
- Cranberry Juice Cocktail: Using a sweetened cranberry juice cocktail provides a foundational sweetness and liquid for the chutney. However, for a less sweet option, you could use unsweetened cranberry juice and adjust the brown sugar to taste. Orange juice is another excellent alternative, adding a different citrusy dimension.
- Apple Cider Vinegar: This ingredient is crucial for balancing the sweetness of the cranberries and brown sugar with its distinct tangy and slightly fruity acidity. While white vinegar can be substituted in a pinch, apple cider vinegar truly brings a unique depth of flavor that complements the other ingredients wonderfully.
- Brown Sugar: Provides a rich, caramel-like sweetness that rounds out the tartness of the cranberries. You can adjust the amount of brown sugar to your personal preference, adding more for a sweeter chutney or less for a tangier profile.
- Orange Zest: Don’t skip this! The finely grated zest of one orange introduces a bright, aromatic citrus note that elevates the entire chutney. It adds a layer of freshness and complexity that can’t be replicated.
- Cinnamon: A dash of ground cinnamon infuses the chutney with a comforting warmth and subtle spice, perfect for pairing with holiday flavors. For added complexity, consider a tiny pinch of nutmeg or a whisper of ground cloves.
- Optional Add-ins for Texture & Flavor:
- Apples: Small diced apples (like Fuji or Honeycrisp) add a pleasant crispness and a mild sweetness that cooks down beautifully into the chutney.
- Golden Raisins: These plump, sweet morsels contribute a delightful chewiness and natural sweetness, complementing the tart cranberries.
- Pecans: Added at the very end, chopped pecans provide a wonderful crunch and nutty flavor. Walnuts are a great alternative if you prefer their earthier taste.
Crafting Your Cranberry Brie Crostini: Step-By-Step Guide
Follow these detailed steps to create your exquisite Cranberry Brie Crostini. Precision and timing are key to achieving perfect results.

- Step 1: Prepare the Cranberry Chutney (Can be made in advance):
Begin by combining all the chutney ingredients, except for the chopped pecans, into a small saucepan. This includes the fresh cranberries, cranberry juice cocktail, apple cider vinegar, brown sugar, diced apple, golden raisins, orange zest, and cinnamon. Stir everything together thoroughly to ensure the sugar dissolves and the ingredients are well mixed. Place the saucepan over medium-high heat. Bring the mixture to a gentle boil, stirring occasionally to prevent sticking. As the cranberries begin to soften and “pop,” indicating they are releasing their juices, reduce the heat to low. Allow the chutney to simmer gently for approximately 15 minutes, or until it has thickened to your desired consistency. It should be rich and syrupy but still have some texture from the cranberries and apples. Once thickened, remove the saucepan from the heat and transfer the chutney to a heatproof bowl. Let it cool completely to room temperature, then chill in the refrigerator until you are ready to serve. Making the chutney a day or two in advance allows the flavors to meld and deepen beautifully.

- Step 2: Prepare and Bake the Cranberry Brie Crostini:
Preheat your oven to 375°F (190°C). While the oven heats, slice your fresh baguette into pieces about ½ to ¾ inch thick, cutting on a slight diagonal for a more elegant presentation. Discard the very end pieces. Arrange the baguette slices in a single layer on a baking sheet lined with parchment paper. Using a pastry brush, lightly brush both sides of each baguette slice with extra virgin olive oil. This not only adds flavor but also helps achieve that perfect golden crispness. Next, place a slice of brie, approximately ¼ inch thick, on top of each baguette slice. Ensure the brie covers most of the bread surface. Transfer the baking sheet to the preheated oven and bake for 5-7 minutes. Keep a close eye on them; the goal is for the brie to be beautifully melted and gooey, and the edges of the baguette to turn a light golden brown and become slightly crisp. - Step 3: Assemble and Garnish:
Once baked, carefully remove the crostini from the oven. While still warm, spoon a generous dollop of the cooled cranberry chutney over the melted brie on each crostini. The contrast in temperature between the warm brie and cool chutney is delightful. For an exquisite finish, sprinkle with chopped pecans (which you reserved earlier), a little extra fresh orange zest for brightness, and a small sprig of fresh rosemary. The rosemary adds a beautiful aromatic touch and a pop of festive color. - Step 4: Serve Immediately:
These Cranberry Brie Crostini are best enjoyed warm, right out of the oven, when the brie is at its most molten and the bread is perfectly crisp. Arrange them artfully on a serving platter and present them to your eager guests without delay.
Expert Tips for the Best Cranberry Brie Crostini
To ensure your Cranberry Brie Crostini turns out absolutely perfect every time, keep these expert tips in mind:
- Serve Immediately for Optimal Warmth and Texture: The magic of this appetizer truly shines when it’s served hot from the oven. The brie will be gorgeously melted and gooey, and the baguette slices will have that ideal golden crispness. While they are still delicious once cooled, the experience of warm, velvety brie is unparalleled. Aim to get these onto your serving platter and to your guests as quickly as possible after baking.
- Chutney Temperature Matters: For the best contrast in flavors and textures, ensure your cranberry chutney is well-chilled before spooning it onto the warm crostini. The cool, vibrant chutney against the hot, creamy brie creates a delightful sensation. If you’re short on time, room temperature chutney is acceptable, but avoid hot chutney, as it can make the crostini soggy and less appealing.
- Prepare Chutney in Advance for Enhanced Flavor: The cranberry chutney is one of the key elements of this dish, and its flavors develop beautifully over time. Preparing it one or two days ahead of your event allows the spices to meld and the fruits to truly infuse, resulting in a richer, more complex taste. Store it in an airtight container in the refrigerator until ready to use.
- Consider Serving Chutney on the Side: While we love the fully assembled crostini, some guests might prefer to control the amount of chutney on their bite, or perhaps some simply aren’t keen on cranberries. For maximum flexibility, you can serve the warm brie crostini on one platter and offer the chilled cranberry chutney in a small bowl alongside it. This allows guests to spoon it over their crostini as they please.
- The Art of Baguette Slicing: Achieving uniformly sliced baguette pieces is crucial for even toasting and a professional presentation. Use a serrated bread knife and apply gentle, even pressure as you slice to avoid crushing the bread. Aim for slices that are about ½ to ¾ inch thick; too thin and they might burn quickly, too thick and they can be overly bready.
- Don’t Overcrowd the Baking Sheet: When arranging your baguette slices and brie on the parchment-lined baking sheet, ensure there’s a little space between each piece. Overcrowding can lead to uneven toasting, as steam gets trapped, making the bread less crisp. Bake in batches if necessary.
- Get Creative with Garnishes: While rosemary and orange zest are classic and beautiful, feel free to experiment with other garnishes. A tiny sprinkle of flaky sea salt can enhance the flavors. A delicate drizzle of high-quality balsamic glaze (store-bought or homemade) can add an extra layer of sweet-sour complexity and a glossy finish. Finely chopped fresh thyme leaves could also offer a different herbaceous note.
- Leftover Chutney? No Problem!: It’s likely you’ll have some leftover cranberry chutney, and that’s a good thing! It’s incredibly versatile. Use it as a spread for sandwiches, serve it alongside roasted chicken or pork, dollop it onto yogurt or oatmeal, or even mix it into salad dressings. It stores well in the refrigerator for up to a week.

Print Recipe
Ingredients
Crostini:
- 1 baguette (approx. 12 oz.)
- 5-6 oz. Brie
- 1-2 T olive oil
For the Chutney:
- 1/2 c cranberry juice cocktail
- 1/4 c apple cider vinegar
- 1 12 oz. package fresh cranberries
- 3/4 c brown sugar
- 1 apple small diced
- 1/2 c golden raisins
- zest of one orange
- dash of cinnamon (more to taste)
- 1/4 c chopped pecans
Optional Garnishes:
- rosemary sprig
- extra orange zest
Instructions
-
In a small saucepan, combine all ingredients for the chutney except for the pecans. Stir everything together until well combined. Bring the mixture to a boil over medium-high heat, stirring occasionally. Once the cranberries begin to pop and soften, reduce the heat to low and allow it to simmer for approximately 15 minutes, or until the chutney has thickened to a jam-like consistency. Remove from heat and transfer to a bowl. Chill the chutney until completely cooled. This can be prepared 1-2 days in advance.
-
Preheat your oven to 375°F (190°C).
-
Slice the baguette on a slight diagonal into ½-inch to ¾-inch thick pieces, discarding the end crusts. Arrange the slices in a single layer on a parchment-lined baking sheet. Lightly brush both sides of each baguette slice with olive oil.
-
Place a slice of brie cheese (about ¼ inch thick) onto each piece of olive oil-brushed baguette.
-
Bake for about 5-7 minutes, or until the brie is perfectly melted and the edges of the bread are golden brown and crisp. Carefully remove the baking sheet from the oven.
-
Spoon a generous amount of the cooled cranberry chutney onto each warm crostini. Garnish with chopped pecans, a sprinkle of fresh orange zest, and a small sprig of rosemary, if desired.
-
Serve immediately to enjoy the melted brie and crisp crostini at their best.
Notes
- This brie crostini recipe is best served immediately. For the warm, melted brie, you will want to get these on a platter to guests as quickly as possible. They will still be okay a bit cooled off, but the sooner the better for the ultimate experience.
- You can serve the chutney on the side and allow guests to spoon it themselves. If cranberry isn’t for everyone at the party, just place it on the side of the crostini for everyone to spoon over as they dig in.
- For best results, prepare the chutney in advance. This will give it plenty of time to cool and allow flavors to deepen. You will want it chilled when serving it over top. Room temperature is also acceptable, but you don’t want it hot.
- You will likely have leftover chutney from this recipe, which can be used in many other ways!
