Even without searing, this recipe is a fantastic “dump and go” option, allowing you to set it and forget it until dinnertime.
- A Wholesome, Nutrient-Packed Meal: We prioritize nutrient-dense meals in our home, and this chili delivers. Utilizing beef chuck roast, this recipe provides a solid source of high-quality protein and essential nutrients. Beef is a leading dietary source of iron among U.S. adults, a mineral vital for energy production, oxygen transport, and overall bodily function and growth. Incorporating beef into your diet is a smart choice for supporting a healthy lifestyle, making this chili not just delicious but also incredibly nourishing.
- Perfect for Meal Prep and Freezer-Friendly: Planning ahead has never been easier! - Flavor That Deepens with Time (Amazing Leftovers!): It’s a common truth that many soup and chili recipes taste even better the next day, and this shredded beef chili is no exception – in my opinion, it’s the absolute best for leftovers! Making a large batch means you’re guaranteed at least two fantastic meals for your family. The extra time spent resting allows all the robust spices and savory flavors to meld and deepen, creating an even more complex and satisfying experience with each subsequent serving.

Essential Ingredients for Your Slow Cooker Shredded Beef Chili:
Crafting the perfect shredded beef chili begins with selecting high-quality ingredients. Each component plays a vital role in building the layered flavors and achieving that signature tender texture.
- Beef: For achieving truly tender, melt-in-your-mouth shredded beef, a chuck roast is an unparalleled choice. This holds true not just for this specific chili recipe, but for virtually any crock pot pulled beef dish. The beauty of chuck roast lies in its fibrous nature; tough cuts of meat actually excel in slow-cooking applications, as the low and slow heat breaks down the connective tissues, resulting in incredible tenderness. When selecting your chuck roast, look for good marbling throughout the cut, as these intramuscular fat streaks will render during cooking, contributing significantly to moisture and flavor. While brisket is another option, it typically doesn’t offer the same level of marbling as a chuck roast, which makes the latter superior for shreddable results.
- Olive Oil: A good quality olive oil is essential for searing the beef before it goes into the crockpot. Searing creates a beautiful crust and locks in juices, adding a crucial layer of flavor. If you have another preferred cooking oil that can withstand medium-high heat, such as avocado oil or vegetable oil, feel free to use that as a substitute.
- Onion: We typically opt for a sweet yellow onion when preparing this shredded beef chili recipe, as it mellows beautifully during slow cooking and adds a subtle sweetness. However, a red or white onion would also work wonderfully, each contributing slightly different aromatic notes to the chili base.
- Bell Peppers: My personal preference is to use a combination of one red and one green bell pepper. The red pepper offers a touch of sweetness and vibrant color, while the green pepper provides a slightly sharper, earthier note. Feel free to use any color combination you love or have on hand!
- Spices: The heart and soul of any cozy chili lies in its carefully selected spices. For this recipe, I’ve chosen a blend of classic warm chili spices, including generous amounts of chili powder, earthy cumin, and smoky paprika. A touch of heat comes from crushed red pepper flakes, while a hint of sweetness from cinnamon adds an unexpected depth that truly rounds out the flavor profile. Additionally, oregano, garlic powder, and onion powder are key flavor enhancers that provide an aromatic foundation. If you desire an extra kick, a pinch of cayenne pepper can be added to your liking.
- Diced Tomatoes: Canned diced tomatoes are incredibly convenient and bring a bright, acidic counterpoint to the rich beef. You can certainly use crushed tomatoes if you prefer a smoother texture, or fire-roasted tomatoes for an extra layer of smoky flavor.
- Tomato Sauce: It’s important not to confuse this with marinara or spaghetti sauce. We’re looking for plain canned tomato sauce, typically found alongside diced and crushed tomatoes in the grocery aisle. It provides a smooth, concentrated tomato base for the chili.
- Beans: Pinto beans and kidney beans are my go-to choices for their creamy texture and ability to absorb the chili flavors. I prefer using low-sodium or no-sodium varieties, which allows me to control the overall saltiness of the dish precisely. Black beans are also an excellent alternative if they are your preference. Remember to rinse and drain canned beans thoroughly before adding them.
- Canned Diced Green Chiles: These add a mild, tangy kick and a subtle green pepper flavor without overwhelming the dish. For those who enjoy more heat, freshly diced jalapeños can be used in place of, or in addition to, the canned green chiles.
- Sugar: A small amount of sugar works wonders by cutting through the acidity of the tomatoes and balancing the overall flavor profile, resulting in a smoother, more harmonious chili. Brown sugar can be used as an alternative if you prefer its caramel notes.
- Beef Stock: This liquid gold significantly enhances the beefy flavor of the chili and ensures everything remains wonderfully juicy and moist as it slow cooks. If you desire an extra-thick chili, you can absolutely omit this ingredient, as the beef and vegetables will release their own liquids. Beef broth can be used interchangeably with beef stock.
- Worcestershire Sauce: Just a hint of Worcestershire sauce is a secret weapon that, in my opinion, rounds out the savory notes of any beef recipe. Its complex, umami-rich profile adds a subtle depth that makes a noticeable difference.
- Tomato Paste: Added towards the end of the cooking process, tomato paste is a fantastic natural thickener for chili. It also concentrates the tomato flavor, giving the chili a richer, more robust character. If you prefer a thinner chili, you can certainly choose to omit this ingredient.
Step-By-Step Instructions for Your Perfect Slow Cooker Shredded Beef Chili:
Follow these simple steps to create a truly unforgettable shredded beef chili. Taking a little time for initial prep will yield incredible results!
For the most even cooking and best sear, allow your chuck roast to come to room temperature for about 20 minutes before you begin searing. This helps prevent the meat from seizing up when it hits the hot pan.
- Prepare the Beef: Cut your approximately 3½ lb beef chuck roast into 3-4 relatively even chunks. This helps with searing and ensures the meat cooks down beautifully. Pat the meat thoroughly dry with paper towels – this is crucial for achieving a good sear. Season each piece generously on all sides with sea salt (about 1 tsp total, or to your preference).

- Sear the Beef: Heat a large, heavy-bottomed skillet (cast iron works wonderfully) over medium-high heat. Add a tablespoon or two of olive oil. Once the oil is glistening and shimmering, carefully add the seasoned pieces of beef to the skillet, ensuring not to overcrowd the pan (work in batches if necessary). Brown the beef for approximately 2-3 minutes on each side until a deep, golden-brown crust forms. This searing step is key for locking in flavor.
- Rest the Beef: Once seared, remove the browned beef pieces from the skillet and place them on a clean plate. Set them aside while you prepare the other chili ingredients.

- Assemble the Chili in the Slow Cooker: Prepare your vegetables by small dicing the bell peppers and onion. Drain and rinse both the kidney beans and pinto beans thoroughly. Add the diced green chiles, chopped bell peppers and onion, diced tomatoes, tomato sauce, beef stock, sugar, Worcestershire sauce, and all your measured spices and seasonings (chili powder, cumin, smoked paprika, garlic powder, oregano, onion powder, pepper, sea salt, cinnamon, and crushed red pepper if using) to the crockpot. Stir all these ingredients together until well combined, creating a flavorful base.
- Add the Beef: Gently place the seared beef chunks on top of the other chili ingredients in the slow cooker. It’s perfectly fine if the beef isn’t completely submerged at this point; as the chili cooks, the vegetables will soften and release their juices, covering the meat sufficiently.
- Slow Cook to Perfection: Secure the lid on your slow cooker. Cook the chili on low heat for approximately 8-10 hours, or until the beef is incredibly tender and can be easily pulled apart with a fork. Alternatively, if you’re short on time, you can cook it on high heat for about 4-6 hours, checking for tenderness. The longer, slower cook generally yields a more tender and flavorful result.

- Shred and Thicken: Once the beef is perfectly tender, carefully remove the larger pieces from the crockpot and place them on a cutting board or shallow dish. Using two forks, easily shred the beef into desired consistency, discarding any large pieces of fat or gristle. Return the shredded beef back into the slow cooker. Stir in the tomato paste thoroughly; this will help to thicken the chili and enrich its tomato flavor further.
- Serve and Enjoy: Give the chili a final stir, taste, and adjust seasonings if necessary. Ladle generous portions into bowls and serve immediately with all your favorite chili toppings!
Expert Recipe Tips for the Best Shredded Beef Chili:
Achieving a truly exceptional shredded beef chili is simple with these helpful tips:
- Prioritize Searing the Beef for Enhanced Flavor: While it might seem like an extra step, searing your beef chuck roast before introducing it to the slow cooker is a game-changer. This process creates a beautiful, caramelized crust on the exterior of the meat, known as the Maillard reaction, which locks in moisture and develops incredibly complex, rich flavors that simply can’t be achieved otherwise. It adds layers of savory depth that permeate the entire chili. While I don’t always sear for every slow cooker recipe (for instance, it’s not strictly required in my Crockpot Chuck Roast Recipe), when I do take the time for this step, the difference in the final taste and texture is absolutely remarkable and well worth the minimal effort.
- Customize Chili Thickness by Adjusting Liquid: This shredded beef chili recipe is designed to be wonderfully chunky and thick, but individual preferences vary. If you crave an even denser, richer chili, consider omitting the beef stock entirely. Keep in mind that as the beef and vegetables cook, they will release their own natural juices, which can slightly thin out the chili. For maximum thickness, you can also opt to drain any excess liquid from your canned diced tomatoes before adding them to the crockpot. Conversely, if you prefer a slightly thinner chili, you can always add a splash more beef stock or broth towards the end of the cooking process until it reaches your desired consistency.
- Economize by Purchasing and Preparing Larger Cuts of Beef: Smart shopping can significantly reduce the cost of your homemade meals. You can often achieve greater savings by purchasing larger cuts of beef, like a full chuck roast, and then portioning and slicing them yourself at home. Not planning to feed a large crowd? No problem! Divide any unused portions of the beef into smaller, meal-sized pieces, wrap them tightly, and freeze them individually. This way, you’ll have convenient portions ready for future recipes, reducing waste and saving money in the long run. Explore more clever strategies to save when buying beef.
Storage and Reheating Tips for Your Chili:
Proper storage ensures your shredded beef chili remains delicious and safe to eat for days to come, making it perfect for meal prepping.
To store any leftover chili, first allow it to cool completely to room temperature. Then, transfer it into an airtight container. It can be safely refrigerated for approximately 4-5 days. When you’re ready to enjoy it again, the chili can be conveniently reheated on the stove top over medium-low heat, gently warmed in the slow cooker on a low setting, or quickly microwaved until heated through, stirring occasionally to ensure even temperature.
If you wish to freeze this shredded beef chili for longer storage, ensure it has cooled completely. Place it in a freezer-safe container or heavy-duty freezer bags, removing as much air as possible to prevent freezer burn. It can be frozen for up to 3 months. For best results, thaw the frozen chili in the refrigerator overnight before reheating. This gradual thawing helps maintain its texture and flavor.

Creative Serving Suggestions for Shredded Beef Chili:
While this crockpot chili is undoubtedly a satisfying meal on its own, there are numerous delicious ways to serve it that elevate the experience and expand your culinary options. Get creative with these ideas!
- Stuffed Sweet Potatoes: One of our favorite ways to enjoy this chili is spooned generously into roasted sweet potatoes. The natural sweetness of the potato pairs beautifully with the savory, spicy chili, creating a balanced and incredibly satisfying dish.
- Cornbread Companions: Chili and cornbread are a match made in heaven! Serve it alongside a warm, fluffy slice of homemade cornbread, or even a comforting cornbread casserole. The slightly sweet, crumbly texture of cornbread perfectly complements the rich chili.
- Cincinnati Style: Hailing from Cincinnati, chili is often famously served over a bed of spaghetti. My husband frequently anticipates this unique serving style, and I encourage you to try it for a comforting and unexpected twist!
- Over Rice: For a simpler but equally delicious pairing, this chili would be fantastic served over a mound of fluffy white rice. The rice soaks up all the flavorful broth, making each bite incredibly rich.
- With Cinnamon Rolls (Midwest Tradition!): A fascinating tradition in some parts of the Midwest involves serving chili with sweet cinnamon rolls. While I’m personally not entirely convinced by this sweet and savory combination, I say you do you! Don’t knock it until you try it!
- Fresh Dips and Salsas: Whip up some homemade guacamole or a vibrant roasted tomato salsa. These fresh additions can be served alongside your chili with tortilla chips for dipping, or spooned directly over the top for a burst of fresh flavor.
Elevate Your Bowl: Favorite Chili Toppings:
While cheddar cheese and a dollop of sour cream are classic and always delightful, don’t limit yourself! The right toppings can transform a great bowl of shredded beef chili into an extraordinary culinary experience. Here are some of our favorite additions:
- Jalapeños: Add a fresh kick with thinly sliced fresh jalapeños, or enjoy the tangy heat of pickled jalapeños.
- Sliced Green Onion: Provides a mild, fresh onion flavor and a pop of vibrant green color.
- Creamy Avocado: Diced or sliced avocado adds a rich, buttery texture and helps to cool down any heat.
- Crispy Chopped Bacon: Everything is better with bacon! A sprinkle of crispy, salty bacon bits offers an irresistible savory crunch.
- Crunchy Crackers or Tortilla Chips: Classic oyster crackers, saltines, or sturdy tortilla chips are perfect for crumbling into your chili. We especially LOVE adding crunchy Fritos for that extra corn chip goodness.
- Fresh Diced Tomatoes: A burst of fresh, juicy tomato adds brightness and a textural contrast.
- Fragrant Cilantro: Freshly chopped cilantro brings a vibrant, herbaceous note that complements the chili spices beautifully.
- A Drizzle of Hot Sauce: For those who crave extra heat, a few dashes of your favorite hot sauce can personalize the spice level.
- Tangy Pickled Onions: These offer a delightful tartness and a beautiful pink hue, cutting through the richness of the chili.
- Warm Cornbread or Cornbread Croutons: Crumbled cornbread or toasted cornbread croutons add a comforting texture and absorb the chili’s flavors.
- A Squeeze of Fresh Lime Juice: A bright squeeze of lime juice at the end can awaken all the flavors, adding a zesty finish.

Instructions
-
For best results, allow your beef chuck roast to sit out at room temperature for about 20 minutes before searing. This promotes more even cooking. Cut the roast into 3-4 even chunks. Pat the meat thoroughly dry with paper towels, then season generously on all sides with sea salt.
-
Heat 1-2 tablespoons of olive oil in a large skillet (preferably cast iron) over medium-high heat until it glistens. Add the seasoned beef chunks, ensuring not to overcrowd the pan. Sear the beef for about 2-3 minutes per side, until a deep golden-brown crust forms. Remove the seared beef from the skillet and set it aside on a plate.
-
In your slow cooker, combine the drained green chiles, small diced bell peppers, small diced onion, canned diced tomatoes, tomato sauce, beef stock, sugar, Worcestershire sauce, and all the spices (chili powder, cumin, smoked paprika, garlic powder, oregano, onion powder, pepper, sea salt, cinnamon, and optional crushed red pepper). Stir these ingredients well to create your chili base.
-
Add the seared beef chunks to the crockpot, nestling them among the other chili ingredients. They don’t need to be fully submerged at this stage, as the liquid will increase as the chili cooks.
-
Cover the slow cooker and cook on low heat for approximately 8-10 hours, or until the beef is incredibly tender and easily pulls apart with a fork. (Alternatively, you can cook on high heat for 4-6 hours, checking for tenderness).
-
Once the beef is cooked and tender, carefully remove the pieces from the slow cooker and place them on a cutting board. Using two forks, shred the beef into your desired consistency, discarding any large pieces of fat. Return the shredded beef to the slow cooker.
-
Stir in the tomato paste until it’s fully incorporated. This will help to thicken the chili and enrich its flavor. Taste and adjust any seasonings if needed. Serve hot with your favorite toppings and enjoy!
Notes
If you prefer a super thick chili, omit the beef stock. This chili is fairly chunky and thick, but everyone has their own preference. There will be juices released as the meat cooks, so this can thin it out a bit. Simply leave out the broth and drain excess liquid from the canned tomatoes as well for a denser chili.
Storage: Store this chili in an airtight container for up to 5 days in the refrigerator or freeze for up to 3 months. Thaw in the refrigerator before reheating.
