Miniature, handheld versions of breakfast classics are always a hit. These pancake bites are light and fluffy, with a tender texture that’s irresistible. They’re versatile, easy to make ahead, and convenient for mornings when time is tight.

Highlights:

  • Light and fluffy texture that mimics classic pancakes
  • Customizable with nutritious or indulgent add-ins
  • Freezer-friendly for quick reheating later
  • Eat by hand or serve with butter and syrup for a fork-and-knife option

If you enjoy simple breakfast recipes, these pancake bites pair well with other easy options like banana oat pancakes, cottage cheese waffles, or quick breakfast muffins. They make great additions to a weekly prep plan.

Ingredient Notes

  • You can adjust the sweetness to taste; maple syrup adds flavor and richness, so consider keeping at least a small amount.
  • Substitute white whole wheat flour for all-purpose flour to boost fiber and nutrients.
  • Whole milk gives a richer result, but skim, 2%, almond milk, or other milk alternatives will also work. Texture may vary slightly depending on the choice.

Ways To Vary This Recipe

  • Add-in ideas: mini chocolate chips, chopped pecans, cooked sausage crumbles, chopped bacon, sprinkles, a swirl of Nutella, blueberries (thawed frozen wild blueberries work well), shredded coconut, or extra warm spices like cinnamon or pumpkin pie spice.
  • Boost the protein: Replace 1/4 cup of the flour with 1/4 cup vanilla protein powder and add a splash more milk if needed. Another option is to stir in 1/4 cup plain Greek yogurt for added creaminess and protein.

Step-By-Step Instructions

Dry ingredients mixed in glass bowl.

Step 1: Preheat the oven to 350°F (175°C). In a small bowl, whisk together the flour, baking powder, sugar, salt, and nutmeg. Set the dry mixture aside.

Wet ingredients added to glass bowl before mixing.

Step 2: In a medium bowl, whisk together the eggs, milk, vanilla, melted butter, and maple syrup until combined.

Step 3: Pour the dry ingredients into the wet mixture and gently stir just until combined. The batter should be mostly smooth with a few small lumps; avoid overmixing to keep the bites tender.

Step 4: If adding mix-ins like chocolate chips or blueberries, fold them in now without overworking the batter.

Step 5: Grease a 24-cup muffin tin or use a silicone pan. Spoon about 3 tablespoons of batter into each well, filling evenly. If you only have one tin, bake in batches.

Step 6: Bake for 13–16 minutes, or until the edges are a very light golden brown and a toothpick inserted into the center comes out clean. Cool in the pan for about 10 minutes before removing. Serve warm.

Recipe Tips

Avoid overbaking. Slightly underbaked bites will remain soft and tender; if overbaked they become dry and firm.

Mix gently. Stir the dry ingredients into the wet only until combined to keep the bites light and fluffy. Overmixing develops gluten and results in chewier texture.

Pancake Bites Storage

Keep cooked pancake bites in an airtight container in the refrigerator for 5–6 days. Reheat individual bites in the microwave for 30–45 seconds or until warmed through.

To freeze, let the bites cool completely and place them in a freezer-safe container or resealable bag. Freeze for up to three months. Thaw overnight in the fridge or reheat from frozen by wrapping a few in a paper towel and microwaving in 30-second intervals until hot.
