Ingredients

BLUEBERRY LEMON LAYER

  • 2 ½ cup blueberries, fresh or frozen
  • ¼ – ⅓ cup sugar, more if super tart berries
  • juice of half a lemon
  • 2 tsp lemon zest, approx. 1½ Tbsp

  • 1 ½ cup quick oats
  • 1 ½ cup flour
  • 1 cup light brown sugar, loosely packed
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, melted and slightly cooled
  • 2-3 tsp lemon zest
  • 1 tsp vanilla extract

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine sugar, lemon juice, lemon zest, blueberries, and cornstarch. Mix well and set aside.
