Key Ingredients for Irresistible Honey Lime Fajitas:

  • Chicken Breast: Opt for boneless, skinless chicken breasts, thinly sliced to about 1/2-inch thickness. This ensures quick and even cooking, which is crucial for a 15-minute bake time. Kitchen shears can be a handy tool for this task, making slicing effortless, or you can purchase pre-sliced thin chicken cutlets. Avoid bone-in or thicker cuts as they require significantly longer cooking times and won’t work for this rapid sheet pan method.
  • Bell Peppers: A colorful mix of bell peppers (red, green, and yellow are my go-to choices) not only adds vibrant visual appeal to your fajitas but also contributes a spectrum of sweet, slightly bitter flavors and essential nutrients. Make sure to slice them uniformly into thin strips so they cook evenly and become perfectly tender-crisp alongside the chicken.
  • Onion: Red onion is our preference for this recipe due to its vibrant color and slightly sharper, more pungent flavor, which mellows beautifully and sweetens when roasted. However, white or yellow onions can be easily substituted based on your personal preference or what you have available in your pantry.
  • Olive Oil: Extra virgin olive oil provides a rich and robust base for the marinade, helping to evenly distribute the incredible flavors of the spices and ensuring the chicken and vegetables cook perfectly without sticking to the pan. You can certainly opt for another high-quality cooking oil that you enjoy more if desired.
  • Lime: Freshly squeezed lime juice is absolutely non-negotiable for that authentic, bright, and zesty fajita zing. Its natural acidity not only tenderizes the chicken, contributing to a juicier result, but also cuts through the richness of the other ingredients. For an amplified citrus note in your marinade, consider adding a touch of finely grated lime zest.
  • Honey: This ingredient is crucial as it adds a delightful touch of natural sweetness that perfectly balances the tart lime flavor, creating a well-rounded and irresistible taste profile. The honey also aids in achieving a beautiful caramelization on the chicken and vegetables. If honey isn’t your preference, a small amount of maple syrup can be used as a suitable alternative.
  • Homemade Fajita Seasoning: Crafting your own seasoning blend ensures the freshest and most vibrant flavors, allowing you to customize the heat to your liking. My signature blend for these fajitas includes:
    • Chili Powder: Forms the foundational Tex-Mex warmth and depth of flavor.
    • Cumin: An earthy and absolutely essential spice for that unmistakable classic fajita taste.
    • Smoked Paprika: Do not skip this! Smoked paprika is a game-changer, imparting a deep, smoky depth that truly elevates the entire dish and sets it apart. While regular paprika works, the smoked variety makes a significant difference.
    • Garlic Powder: Adds a savory, aromatic punch that complements all the other spices beautifully.
    • Oregano: Contributes a herbaceous, slightly peppery note that enhances the overall flavor complexity.
    • Sea Salt & Black Pepper: To taste, these fundamental seasonings are essential for enhancing and bringing out all the other incredible flavors.
    • Cayenne Pepper (Optional): For those who love an extra kick, a dash of cayenne pepper or a few drops of hot sauce added to the marinade will bring a delightful fiery element to your fajitas.

  • Prepare Your Ingredients: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot and ready for optimal roasting. Next, finely slice your boneless, skinless chicken breasts into thin strips – aiming for about half an inch in thickness for quick and even cooking. Use sharp kitchen shears or a good chef’s knife for this task. Equally important is to uniformly slice your colorful bell peppers and red onion into thin strips, ensuring all ingredients cook at the same rate and achieve a perfect tender-crisp texture.
  • Marinade for Flavor Infusion: Transfer the sliced chicken, bell peppers, and onion into a large mixing bowl. Pour in the olive oil, freshly squeezed lime juice, honey, and your homemade fajita seasoning blend. Toss everything thoroughly until every piece of chicken and vegetable is evenly coated in the vibrant, aromatic marinade. For the absolute best results and deepest flavor, cover the bowl and allow the mixture to marinate in the refrigerator for at least 15 minutes, or ideally, for up to 24 hours. The longer it marinates, the more tender and flavorful your fajitas will be.

  • Arrange on the Sheet Pan: Once marinated, spread the chicken and vegetable mixture evenly onto a large baking sheet. It’s crucial to arrange everything in a single, even layer, making sure not to overcrowd the pan. Overlapping ingredients can lead to steaming instead of roasting, preventing that delicious caramelization and tender-crisp texture. If necessary, use two sheet pans to ensure proper spacing and achieve the best results. You can also line your sheet pan with parchment paper for even easier cleanup.
  • Bake to Perfection & Serve: Place the sheet pan in your preheated oven and bake for approximately 15 minutes. The chicken should reach an internal temperature of 165°F (74°C) when checked with an instant-read meat thermometer – this is key to ensuring it’s safely cooked but still wonderfully juicy. During the last few minutes of baking, you can wrap a stack of flour or corn tortillas in foil and warm them in the oven alongside your fajitas. Once cooked, remove the sheet pan from the oven and let the fajitas rest for about 5 minutes. This allows the juices in the chicken to redistribute, ensuring maximum tenderness. If there’s any excess liquid on the pan, gently blot it with a paper towel before serving. Dish out with your favorite toppings and enjoy your flavorful, homemade fajitas!

Pro Tips for the Best Honey Lime Sheet Pan Chicken Fajitas:

  • Don’t Overcrowd Your Sheet Pan: For perfectly roasted, slightly charred fajitas, adequate spacing is vital. If your chicken and vegetables are too close together on the pan, they will steam instead of roast, resulting in a less desirable, softer texture. Always use a large sheet pan, or divide the mixture between two pans if you’re making a larger batch. This allows for proper airflow and ensures every piece gets beautifully caramelized and cooked evenly.
  • Embrace the Make-Ahead Option: Maximize convenience and flavor by prepping this dish in advance. Slice your chicken and vegetables, then toss them with the marinade ingredients in a large freezer-safe bag or airtight container. Let it marinate in the refrigerator for at least 15 minutes, or up to 24 hours. This not only significantly reduces active cooking time on a busy day but also allows the honey-lime-spice flavors to deeply penetrate the chicken and veggies, leading to a more succulent and aromatic result.
  • Ensure Perfect Doneness with a Meat Thermometer: To achieve perfectly cooked chicken every single time – wonderfully juicy and tender, never dry – an instant-read meat thermometer is your absolute best friend. Insert it into the thickest part of the chicken (avoiding bone) to ensure it reaches an internal temperature of 165°F (74°C). This guarantees food safety and, crucially, prevents overcooking, which is key for retaining the chicken’s moisture and tender texture.
  • Add a Touch of Char (Optional): For that authentic fajita sizzle and slightly smoky char, consider finishing your fajitas under the broiler for 1-2 minutes after they’ve finished baking. Keep a close eye on them, as broilers can cook very quickly and burn easily! This quick step adds an extra layer of delicious flavor and texture that truly elevates the dish to restaurant quality.
  • Easy Cleanup with Parchment Paper: For an even more effortless post-dinner routine, simply line your sheet pan with parchment paper before spreading out the ingredients. This simple trick makes cleanup an absolute breeze, saving you precious time and effort after enjoying your delicious fajitas.

Storage and Freezing Tips:

Leftover Honey Lime Sheet Pan Chicken Fajitas are just as delicious the next day! Store them in an airtight container in the refrigerator for up to 3-4 days. For reheating, gently warm them in the microwave, air fryer, or a skillet on the stovetop until warmed through. The air fryer is particularly great for crisping up the veggies again, bringing back some of that freshly cooked texture.

While this recipe freezes well, be mindful that the bell peppers might soften and become slightly more watery in texture upon thawing. The chicken, however, maintains its quality beautifully in the freezer. Allow the fajitas to cool completely before transferring them to a freezer-safe bag or container for up to 2-3 months. Thaw them overnight in the refrigerator before reheating for the best results.

  • Essential Toppings Bar: Create a vibrant and customizable toppings bar to elevate each fajita! • Hearty Fajita Bowls: For a lighter, gluten-free, or lower-carb option, skip the tortillas and create satisfying fajita bowls. Frequently Asked Questions About Baked Chicken Fajitas:

  • Can I use other types of meat for this recipe? While chicken breast is ideal for its quick cooking time and lean protein, you can certainly adapt this recipe. Thinly sliced steak (like flank or skirt steak) works wonderfully and cooks quickly, requiring similar cooking times. Shrimp fajitas are another fantastic option, cooking even faster – usually just 8-10 minutes. Adjust cooking times accordingly based on the protein you choose.
  • How can I make these fajitas spicier? To crank up the heat in your fajitas, you have several options. Increase the amount of cayenne pepper in your seasoning blend to your desired spice level. You can also include a finely diced jalapeño or serrano pepper with the bell peppers before baking for an added fresh heat. For a quick boost of fire after cooking, a drizzle of your favorite hot sauce or a side of spicy salsa will also add a satisfying kick.
  • How do I prevent the vegetables from getting soggy? The key to achieving crisp-tender, perfectly roasted vegetables is to avoid overcrowding the pan. Ensure all ingredients, both chicken and vegetables, are spread in a single layer to allow for proper roasting rather than steaming. Also, be careful not to overcook them; 15 minutes is usually enough for them to soften while retaining some delightful bite. If you prefer a firmer texture for your veggies, you can add them to the pan a few minutes after the chicken has started cooking.
  • Can I use frozen chicken or vegetables in this recipe? For the best texture and flavor, fresh chicken and vegetables are always recommended. If using frozen chicken, ensure it is completely thawed and thoroughly patted dry before slicing and marinating. Frozen pre-sliced bell peppers can be used but may release more water during cooking, potentially leading to a slightly softer, less crisp texture compared to fresh.

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Servings: 4

Ingredients

  • 1.5 lb chicken breast, boneless, skinless, cut into thin strips
  • 3 bell peppers, any color, sliced into thin strips
  • 1 small red onion, sliced into thin strips
  • 3 T olive oil
  • Juice of 1 lime, approx. 2 Tablespoons
  • 1 T honey
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • ½-1 tsp smoked paprika
  • 1 tsp cumin
  • ¾ tsp oregano
  • ½ tsp black pepper
  • ½ tsp sea salt, more or less as desired
  • ¼ tsp cayenne pepper (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut chicken into thin strips. Slice onion and peppers into thin strips as well. Place chicken and veggies in a large bowl and top with marinade ingredients and seasoning, tossing well to coat evenly. (If meal prepping or marinading, place in fridge covered until ready to cook.)
  3. Before cooking, spread the chicken and vegetable mixture evenly on a large sheet pan, allowing for as little overlap as possible to ensure even roasting.
  4. Bake for about 15 minutes or until chicken reaches an internal temperature of 165°F (74°C). In the last several minutes, place tortillas wrapped in foil in the oven to heat as well. Remove from oven and rest for about 5 minutes before serving. (Absorb any excess liquid on the pan with a paper towel if desired.)
  5. Serve with your favorite fajita toppings and enjoy!

Notes

Use an instant-read meat thermometer for best results. To avoid over or under cooking your chicken, use a thermometer to check the internal temperature is at 165°F (74°C).

Use a large pan for these baked chicken fajitas. You want to space out the chicken and vegetables as much as possible so there is no overlapping. Using a smaller pan, as sometimes shown in photos, may lead to steaming instead of roasting. For optimal results, use a much larger pan or divide the ingredients between two pans to ensure the food is well spaced.

Storage: Store leftovers in an airtight container for about 3-4 days in the refrigerator. You can reheat in the microwave, air fryer, or your preferred method.
