  • 1 lb short pasta, such as rigatoni, ziti, penne, or rotini
  • 1 lb mild Italian sausage

  • 15 oz full-fat ricotta cheese
  • ½ c grated parmesan cheese
  • c shredded mozzarella cheese, divided
  • 2 tsp Italian seasoning
  • 3-4 garlic cloves, minced
  • ½ tsp sea salt, adjust to taste
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes, optional, for a kick
  • ¼ c fresh basil, chopped, plus more for topping
  • 1 large egg, lightly beaten
  • 4 c marinara sauce

Instructions

  • Start a large pot of water for the pasta; bring to a rolling boil. Cook pasta to just under al dente according to package instructions. Drain and drizzle with a touch of olive oil to prevent sticking.
  • While the pasta cooks, heat a skillet over medium-high heat with olive oil. Sauté the diced onion until translucent. Add the Italian sausage, breaking it into smaller pieces, and brown thoroughly until the internal temperature reaches 160°F. Drain any excess grease and set aside to cool slightly.
  • In a large bowl, combine the ricotta, beaten egg, 2 cups of mozzarella, parmesan, chopped basil, Italian seasoning, minced garlic, salt, black pepper, and red pepper flakes (if using). Stir well to combine all ingredients evenly.
  • Add the cooked pasta and browned Italian sausage (and onions) to the cheese mixture. Gently fold everything together until well combined.
  • Lightly spray the bottom of a 9×13 inch baking pan with oil. Spread about 2 cups of marinara sauce evenly over the bottom of the pan. Then, add the pasta mixture to the pan, spreading it evenly over the marinara.
  • Cover the pasta with the remaining 2 cups of marinara sauce. Sprinkle the remaining shredded mozzarella cheese over the top. Cover the pan loosely with aluminum foil and bake in a 375°F preheated oven for approximately 20 minutes.
  • Remove the foil and continue to bake for another 10-15 minutes uncovered, or until the cheese is melted, bubbly, and lightly golden. For an extra golden-brown crust, you can broil on high for the last 2-3 minutes, watching carefully to prevent burning.
  • Allow the pasta bake to cool for 10 minutes before serving. Garnish with more freshly chopped basil.
