- 2 cups baby spinach
- 1 can or two cups black beans
- 3/4 cup corn
- 1/4 cup diced chiles
- 1/2 cup diced tomatoes
- Juice of 1/2 lime
- 1/2 T chili powder
- 1/2 T cumin
- 1 tsp garlic powder
- 1/8 tsp crushed red pepper, more to taste
- Sea Salt and cracked pepper to taste

Preheat oven to 400°F (200°C).

Carefully poke each sweet potato several times with a fork. This helps steam escape during baking and prevents them from bursting.

Bake the sweet potatoes directly on the oven rack for about 45-55 minutes, or until they are very tender when squeezed.

Approximately 15 minutes before the sweet potatoes are done baking, begin preparing the filling. Heat a skillet over medium heat with a teaspoon of olive oil. Add the baby spinach and sauté until it is just wilted, about 2-3 minutes.

Add the diced tomatoes, diced chiles, and corn to the skillet. Cook for another 2-3 minutes, stirring occasionally, until heated through.
