These French Toast Muffins are such a simple way to toss together a delicious breakfast that can make French toast into a grab and go dish. About 10 minutes to prep and perfect with powdered sugar and a maple syrup drizzle! Make a Blueberry French toast muffin or classic flavor. Other fun add ins as well!

Ingredients
Main Muffins:
- 6 large eggs
- 1 ½ c whole milk (or dairy-free if needed)
- ¼ c brown sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 loaf brioche bread (about 12-14 slices)
- ¾ c blueberries (optional)
Streusel Topping (optional):
- ¼ c flour
- ¼ c butter, melted
- ¼ c brown sugar, packed
- ½ tsp vanilla
- Pinch of sea salt
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together eggs, milk, vanilla, cinnamon, and brown sugar until well combined.
- Cut bread into about 1 – 1 ½ inch pieces.
- Combine bread pieces (and blueberries if using) with the egg mixture and stir gently to allow the bread to soak up all the liquid. Let it sit for a few minutes for full absorption.
- If using streusel topping, combine flour, melted butter, packed brown sugar, ½ tsp vanilla, and a pinch of sea salt in a small bowl until crumbly. Add an extra teaspoon or two of flour if it seems too wet.
- Grease a muffin pan thoroughly, including the cavities and the top surface. Spoon the French toast mixture into the muffin tin, pressing gently to help form the muffin shape.
- Sprinkle the prepared streusel topping evenly over the top of each muffin.
- Bake for 20-25 minutes, or until the tops are golden brown and the muffins are set and no longer wet in the center. The muffins will puff up in the oven and then settle slightly upon cooling.
- Allow to cool in the muffin tin for several minutes before removing and serving. Refrigerate or freeze any leftovers.
Notes
- Muffin liners can be used but are not strictly necessary. If you spray or grease the muffin cavities well, these will easily pop out of the muffin tin after baking.
- Grease the muffin tin well or line it. It can be challenging to get these muffins out of the tin if it hasn’t been appropriately greased. These muffins mainly rise straight up but the tops may get stuck as well so grease the top surface of the muffin tin as well.
- Day-old bread works really well to keep the bread from becoming overly soggy. Just like when you make stuffing or another French Toast bake, bread that is too fresh can become very soggy when combined with the egg mixture. If so, let your bread slices sit out overnight to dry out a bit and absorb the egg mixture without breaking down too much.
