Why This Cornbread and Beef Stuffing is a Must-Try:

This isn’t just another side dish; it’s an experience that brings unparalleled comfort and flavor to your table. Here’s why this Ground Beef Cornbread Stuffing will quickly become a cherished family favorite:

  • A Delightful Twist on a Timeless Classic: Stuffing, or dressing depending on your regional preference, is an essential component of any holiday spread. However, serving the exact same recipe year after year can sometimes feel a bit repetitive. Our beefy cornbread stuffing offers a refreshing and exciting evolution of this tradition. By incorporating the rich flavor of ground beef and the rustic texture of cornbread, this recipe transcends the ordinary, creating a side dish that’s both familiar and wonderfully novel. It’s a culinary upgrade that will surprise and delight your guests.
  • Effortless Holiday Prep with Advance Preparation: When hosting a holiday meal, minimizing stress is key. This recipe is designed with your convenience in mind, allowing for easy advance preparation. You can assemble the entire stuffing a day ahead of time, then simply bake it before your meal is served. This thoughtful feature frees up valuable time on the actual holiday, allowing you to relax, enjoy the company of your loved ones, and savor the festive atmosphere without feeling rushed or overwhelmed.
  • A Protein-Packed Powerhouse: Beyond its incredible taste, this beef-infused stuffing offers a significant nutritional boost. Beef is renowned for its delicious flavor, but it’s also an excellent source of high-quality protein. Did you know that a mere 3-ounce cooked serving of beef provides half of your recommended daily value of protein? This makes our cornbread and beef stuffing not only a superb side dish but also a versatile option that can easily transform into a satisfying main course. Simply add a fresh green salad or a vibrant vegetable side, and you have a complete, wholesome, and delicious meal. For another protein-rich beef dish, be sure to check out our comforting Crock Pot Hamburger Soup.

Did You Know?

Today’s farmers and ranchers are dedicated to raising delicious beef more sustainably than ever before. America’s beef farming industry boasts one of the smallest carbon footprints globally, demonstrating an environmental impact 10 to 50 times lower than some other nations. Choosing beef means supporting practices that prioritize both quality and environmental stewardship.

Essential Ingredients for Your Savory Stuffing:

Crafting this incredible cornbread and beef stuffing requires a thoughtful selection of ingredients. Here’s a breakdown of what you’ll need, along with helpful substitution tips:

  • Cornbread: The foundation of our stuffing! While I love the character and texture of homemade cornbread (my personal favorite is Krusteaz Honey Cornbread), using pre-made cornbread cubes from the grocery store is an excellent time-saving option. The most critical aspect is that your cornbread must be dried out or stale. This prevents the stuffing from becoming mushy and ensures it retains a delightful texture after baking. Think of it as creating homemade croutons for your stuffing base.
  • Ground Beef: This is where the hearty, savory depth comes from. While breakfast sausage is often used in traditional dressing, the simplicity and versatility of plain ground beef work beautifully here. However, if you can find ground beef sausage, it will add another layer of complex flavor. For this recipe, I recommend using an 85% to 90% lean ground beef to prevent the dish from becoming overly greasy, ensuring a perfect balance of moisture and richness.
  • Celery: A classic stuffing ingredient that provides a pleasant, subtle crunch and a fresh, aromatic note. If you’re not a huge fan of celery, you can easily reduce the amount to suit your preference without compromising the overall flavor.
  • Onion: Sweet yellow onion is ideal for this beef stuffing, offering a gentle sweetness that complements the savory beef and herbs. A white onion will also work perfectly fine if that’s what you have on hand.
  • Butter: Whether you opt for salted or unsalted butter, both will yield delicious results. If using salted butter, simply taste the mixture before adding additional salt to ensure it’s seasoned to your liking.
  • Fresh Herbs: The magic of this stuffing truly comes alive with fresh herbs. A combination of fresh sage, thyme, and parsley delivers an unparalleled aromatic profile. While dried herbs can be used in a pinch, fresh herbs provide a vibrant, complex flavor that truly elevates the dish. For an extra touch of sophistication, consider adding a hint of finely chopped rosemary.
  • Garlic Cloves: A few cloves of freshly minced garlic are essential for building a robust flavor base. Garlic adds warmth and depth, rounding out the savory notes of the beef and herbs.
  • Eggs: Large eggs are crucial for binding all the ingredients together, giving the stuffing a cohesive structure and a wonderfully fluffy, yet moist, texture. They prevent the cornbread from completely disintegrating during baking.
  • Broth: For the most intensely beefy flavor, we use beef broth in this recipe. However, chicken broth or vegetable stock can be excellent alternatives if you prefer a lighter profile or don’t have beef broth available. Beef stock will also work wonderfully, providing a richer consistency.
  • Salt and Black Pepper: These foundational seasonings are vital for enhancing all the other flavors. Feel free to adjust the amounts to your personal taste, always tasting as you go to achieve the perfect balance.

Planning to stock up on beef in advance for your holiday feast? You can conveniently freeze beef in its original packaging for up to two weeks. For longer-term storage, ensure it’s wrapped securely in heavy-duty aluminum foil or placed in airtight plastic freezer bags, removing as much air as possible to prevent freezer burn.

Crafting Your Delicious Cornbread and Beef Stuffing:

Follow these easy steps to create a show-stopping side dish that will impress everyone:

Baked honey cornbread in glass baking pan.
Cubed cornbread on parchment lined cookie sheet.
  1. Prepare Your Cornbread: Your first decision is whether to bake your own cornbread from scratch, use pre-baked loaves from a local bakery, or opt for convenient store-bought cornbread cubes. If you choose to bake your own, I highly recommend Krusteaz Honey Cornbread; two boxes bake perfectly in a 9×13 inch baking pan and yield plenty for this recipe.
  2. Dry Out the Cornbread: This is a crucial step for achieving the ideal stuffing texture. If baking your own cornbread, allow it to cool completely before carefully cubing it (cornbread can be delicate, so be gentle to minimize crumbling). Arrange the cubes in an even layer on a baking sheet. You can either leave them out at room temperature for at least 24 hours to air-dry, or for a quicker method, bake them in a preheated oven at 275°F (135°C) for about 30-45 minutes, tossing them regularly until they are nicely dried out and firm, almost like croutons. A combination of air-drying overnight followed by a short bake in the oven often yields the best results.
Sautéed celery and onion in skillet.

  1. Sauté Aromatics: While your cornbread is drying, prepare your vegetables and herbs. Chop the celery, dice the onion, mince the garlic, and finely chop your fresh sage, thyme, and parsley. In a large, sturdy skillet, melt the butter over medium-high heat. Add the chopped onion and celery and sauté them for several minutes, stirring occasionally, until the onion becomes translucent and softened, and the celery is tender-crisp.
  2. Brown the Ground Beef: Add the ground beef to the skillet with the sautéed vegetables. Break up the beef with a spoon and cook, stirring frequently, until it is thoroughly browned and no pink remains. Once the beef is cooked through, drain any excess fat to prevent the stuffing from becoming greasy. Reduce the heat to medium, then stir in the chopped fresh herbs, minced garlic, sea salt, and black pepper. Cook for about 1 minute, allowing the aromatics to become fragrant, then remove the skillet from the heat.

  1. Combine Ingredients: Transfer the dried cornbread cubes to a very large mixing bowl. Add the cooked beef and vegetable mixture from the skillet over the cornbread. In a separate small bowl, whisk together the large eggs and beef broth until well combined. Pour this liquid mixture evenly over the beef and bread mixture in the large bowl. Gently toss all the ingredients using a large spoon or your hands, ensuring the cornbread and beef are thoroughly coated. It’s normal for the cornbread to crumble a bit more than regular bread; this contributes to the stuffing’s delightful texture. If the mixture appears too dry, you can gradually add a little more beef broth until it reaches your desired consistency. For those who prefer fewer crumbs, consider using more crouton-like bread cubes from the grocery store.

  1. Bake to Perfection: Transfer the prepared stuffing mixture into a greased 9×13 inch baking pan or a large casserole dish. Preheat your oven to 375°F (190°C). Cover the baking dish tightly with aluminum foil and bake for approximately 20 minutes. After this initial baking period, remove the foil and continue baking for another 10-15 minutes, or until the top is beautifully golden brown, the center is set, and there’s no excess moisture visible. The internal temperature should reach at least 165°F (74°C).
  2. Serve and Enjoy: Once baked, remove the stuffing from the oven and allow it to cool for about 5 minutes before serving. This brief resting period helps the stuffing set further and makes it easier to scoop. Serve it hot alongside your holiday turkey, roasted chicken, or as a stand-alone comforting meal.

Expert Tips for Stuffing Success:

  • Prep Ahead for Stress-Free Holidays: One of the best features of this recipe is its make-ahead potential. You can fully prepare the stuffing mixture and transfer it to your greased baking pan a day in advance. Simply cover it tightly with foil and refrigerate overnight. Before baking, drizzle a little extra beef broth over the top to re-moisten it, ensuring it bakes up perfectly tender and flavorful. This strategy is a lifesaver for busy holiday hosts!
  • Choose Your Cornbread Wisely: Don’t feel obligated to bake your own cornbread from scratch if time is limited. Store-bought, ready-to-use cornbread cubes or a couple of baked loaves from your local bakery are excellent shortcuts that will still yield a fantastic stuffing. The key is ensuring it’s sufficiently dried out.
  • The Importance of Dry Cornbread: For the best texture, your cornbread cubes *must* be stale or dried out before you begin mixing. This prevents the stuffing from becoming dense and mushy, instead creating distinct, flavorful pieces with a pleasing bite, almost like savory croutons. Don’t skip this step!
  • Transform it into a Hearty Meal: While this ground beef cornbread stuffing shines as a side, it’s hearty enough to be a fantastic main course! Easily convert it into a comforting beef and cornbread casserole for a weeknight dinner. To boost the nutrition and flavor, consider adding diced green and red bell peppers for extra veggies, or a generous sprinkle of your favorite cheese for a gooey, satisfying top. Serve it with a simple side salad, and you have a complete, cozy, and utterly delicious meal for the whole family.

Storage and Reheating Instructions:

To ensure your delicious cornbread and beef stuffing remains fresh and flavorful, follow these storage guidelines:

Store any leftover stuffing in an airtight container in the refrigerator for up to 3-4 days. When you’re ready to reheat, a drizzle of extra beef broth over the top will help re-moisten it, or you can brush the top with a little melted butter for added richness before warming it in the oven or microwave.

For longer storage, allow the stuffing to cool completely after baking. Transfer it to a freezer-safe container, ensuring it is tightly covered and airtight to prevent freezer burn. It can be frozen for up to 3 months. Thaw in the refrigerator overnight before reheating.

Ingredients

  • 12-14 c cornbread cubes, stale/dried out
  • 4-5 celery stalks, chopped, 2 cups
  • 1 large onion, diced
  • 1 lb ground beef
  • 4 T butter
  • 2 T fresh sage, chopped
  • T fresh thyme, chopped
  • 1 T fresh parsley, chopped
  • 2-3 garlic cloves, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 2 large eggs
  • 2 – 2½ c beef broth
  • Optional add-ins: dried cranberries, chopped walnuts or pecans, sautéed mushrooms, diced apples, etc.

Instructions

  1. Add dried out cornbread cubes to a large bowl. (See notes below about options for cornbread and how to dry it out.)
  2. In a large skillet, melt the butter at medium-high heat. Add the onion and celery and sauté for several minutes until the onion just starts to become translucent.
  3. Add and brown ground beef. Once the meat is browned, shift stove to medium heat and add the chopped herbs, garlic, sea salt and pepper. Heat for about 1 minute and then remove from heat.
  4. Add the veggie and beef mixture to the bowl with the corn bread.
  5. In a small bowl, whisk together the eggs and broth to combine. Pour the mixture over top of the beef and bread mixture and gently toss to evenly coat all of the ingredients. The cornbread will crumble up a bit and that is normal. If your mixture seems dry, you can add more broth.
  6. Transfer the mixture to a greased 9×13 inch baking pan or large casserole dish. Bake in preheated oven to 375°F (190°C) covered with foil for about 20 minutes and then remove foil and allow to bake another 10-15 minutes or until the top is golden brown and the center is set and no excess moisture is on top.
  7. Cool for about 5 minutes before serving.

Notes

Prep this recipe a day in advance. You can prep this stuffing a day ahead of time. Get it all made and into the greased pan. Cover and refrigerate overnight. Pour some extra beef broth over top before baking to moisten it up a bit.

Make your own cornbread, or grab store bought. To save time, just grab the ready to go cubes or get a couple baked loaves of cornbread. You do not have to make your own!

Make sure the cornbread is dried out before making this recipe. For best results, you want your bread very dry, almost crouton like before making this dish. This will keep it from becoming a pile of mush and have more texture in the end.

Make this recipe a meal! While this ground beef stuffing makes for a great side, you could easily shift and make it more of a beef and cornbread casserole for a fun dinner. Add some diced green and red peppers for some extra veggies, maybe a sprinkle of cheese and you have yourself a cozy and comforting meal! Serve it up with a salad and enjoy!
