Ingredients
- 1 ½ lb boneless, skinless chicken breast, thawed
- 2 c chicken broth, low sodium (more or less as desired for consistency)
- 2 c corn (frozen, canned, or fresh)
- 1 4 oz. can diced green chiles (or 2 fresh chiles, diced)
- 2 cans cannellini beans, rinsed and drained
- 1 medium onion, chopped (yellow or sweet preferred)
- 2 tsp cumin
- 2 tsp chili powder
- ¾ tsp oregano
- 3-4 garlic cloves, minced (or ½ tsp garlic powder)
- 1 – 2 tsp Sriracha (to taste, optional)
- Juice of 1 fresh lime
- 4 oz cream cheese, full-fat, softened
- ¼ c half and half (or heavy cream)
- ½ tsp cracked black pepper
- ½ tsp sea salt (adjust to taste)
- ½ c chopped fresh cilantro (or more, to taste)
Instructions
- Place chicken at the bottom of the slow cooker. Cover with cumin, chili powder, oregano, salt, and pepper. Top the seasoned chicken with corn, chopped onion, diced green chiles, drained cannellini beans, and minced garlic. Pour chicken broth and fresh lime juice over all ingredients and stir gently to combine.
- Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-5 hours, or until chicken is easily shredded and cooked through (internal temperature 165°F).
- Once the chicken is fully cooked, carefully remove it from the slow cooker. Using two forks, shred the chicken into bite-sized pieces.
- Return the shredded chicken to the slow cooker and stir to combine with the chili. Add the softened cream cheese and half and half. Stir or whisk well until the cream cheese is completely dissolved and the chili is smooth and creamy. This may take a few minutes.
