  • 1 T Olive oil
  • 1 onion, diced
  • 3-4 garlic cloves, minced
  • 4-6 c chicken broth (low sodium preferred)
  • 2 cans diced tomatoes (15 oz.), undrained (no salt added preferred)
  • 2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper (adjust to taste)
  • 1/2 tsp sea salt (or to taste)
  • 1/2 tsp cracked pepper (or to taste)
  • 16 oz gnocchi, shelf stable
  • 3 oz baby spinach
  • 3 T tomato paste, optional, to thicken broth

Instructions

If soup is too thick for your liking, add another cup or so of broth as desired. To thicken up the broth if desired, add 3 T tomato paste and stir until smooth. Adjust salt and pepper to taste.
  4. Serve immediately with freshly chopped basil or parsley and grated Parmesan cheese. Store leftovers for about 3-4 days in the refrigerator.
