Key Ingredients for Perfect Salmon Bites

Creating these flavorful salmon bites starts with selecting the right ingredients. Here’s a closer look at what you’ll need and some tips for best results. You can find the full list of ingredients with exact measurements in the recipe card below.

Salmon, onion, soy sauce, and other labeled ingredients needed for recipe.

Choosing the Right Salmon

  • Salmon: The quality of your salmon makes a big difference. For the best texture and even cooking, I highly recommend using center-cut salmon fillets. These pieces tend to be thicker and more uniform, ensuring each bite cooks consistently. Opt for skinless salmon to simplify the process; your butcher or fish counter attendant at the grocery store can usually remove the skin for you, saving you time and effort. Fresh salmon should have a vibrant color, firm texture, and a mild, oceanic scent, not overly “fishy.”

The Essential Marinade Components

  • Oil: Olive oil is my preferred choice for this salmon recipe due to its readily available nature and mild flavor that doesn’t overpower the salmon. However, for an added layer of Asian-inspired flavor, toasted sesame oil would be a fantastic alternative, especially when paired with the Bang Bang sauce. The oil helps to tenderize the salmon and promote that desirable crispy crust in the air fryer.
  • Minced Garlic: Freshly minced garlic delivers the most vibrant and pungent flavor to the marinade. I find 3-4 cloves to be perfect for this recipe. If fresh garlic isn’t an option, you can substitute with 1/2 to 1 teaspoon of garlic powder, adjusting to your taste.
  • Soy Sauce: Provides a rich, umami depth that is essential for the savory base of the marinade. For those with gluten sensitivities, tamari is an excellent gluten-free alternative that delivers the same great flavor.
  • Honey: A touch of honey balances the savory and acidic elements in the marinade, contributing to the beautiful caramelization of the salmon bites as they cook.
  • Lemon Juice: Freshly squeezed lemon juice brightens the flavors of the marinade and tenderizes the salmon. Just be careful not to marinate for too long (more on this in the tips!).
  • Onion Powder & Smoked Paprika: These spices add an aromatic depth and a hint of smoky warmth that rounds out the marinade beautifully.
  • Salt & Pepper: Essential seasonings to enhance all the other flavors.

Crafting the Signature Bang Bang Sauce

  • Mayonnaise: Forms the creamy base of the sauce.
  • Sweet Chili Sauce: Adds a delightful balance of sweetness and mild heat, giving the “Bang Bang” its characteristic flavor.
  • Sriracha: For that signature spicy kick. You can easily adjust the amount to suit your preferred level of heat, from mildly spicy to fiery.
  • Honey: A small amount of honey further enhances the sweetness and helps create a smooth consistency.
  • Rice Vinegar: Introduces a subtle tanginess that brightens the sauce and cuts through the richness, balancing the overall flavor profile.

Get Creative: Recipe Variations & Serving Suggestions

One of the best things about these Air Fryer Salmon Bites is how adaptable they are. Feel free to customize them to your personal taste preferences and dietary needs:

  • Spice It Up: If you love heat, don’t hesitate to add extra sriracha to the Bang Bang sauce, or incorporate a dash of your favorite hot sauce. For an internal kick, sprinkle a pinch of cayenne pepper into the salmon marinade.
  • Sweet & Tangy Twists: Experiment with different sweeteners in both the marinade and the Bang Bang sauce. Maple syrup or agave nectar can be used in place of honey for a slightly different flavor profile. A squeeze of fresh lime juice or a sprinkle of lime zest in the Bang Bang sauce will add a lovely citrus pop. Orange zest could also be a surprisingly amazing addition!
  • Aromatic Additions: For an extra layer of fragrant flavor, consider adding a teaspoon of freshly minced ginger to the salmon marinade. This pairs wonderfully with the Asian-inspired profile of the dish.
  • Build Your Own Salmon Bowl: These bites are the ideal centerpiece for a customizable and healthy salmon bowl. Serve them over a bed of fluffy white or brown rice, quinoa, or even cauliflower rice. Then, load up on your favorite toppings! Consider additions like creamy cubed avocado, tangy pickled onions, crunchy shaved carrots, crisp shredded cabbage, shelled edamame, thin slices of jalapeño for extra heat, refreshing cucumbers, or a sprinkle of toasted sesame seeds. A final squeeze of fresh lime juice pulls all the flavors together.
  • Beyond the Bowl: Other Serving Ideas: While salmon bowls are fantastic, don’t limit yourself! Serve these salmon bites alongside roasted asparagus or broccoli, a fresh green salad, or even tucked into soft tortillas for a quick and flavorful salmon taco night. They also make an impressive appetizer on their own, perhaps with a side of the Bang Bang sauce for dipping.

How to Master Air Fryer Salmon Bites: A Step-by-Step Guide

Get ready to whip up this amazing meal in just a few simple steps. The process is straightforward, ensuring you get perfect salmon bites every time.

Salmon marinade in glass bowl with whisk.

Step 1: Prepare the Marinade. In a small bowl, combine all the ingredients for the salmon marinade (olive oil, lemon juice, honey, soy sauce, minced garlic, onion powder, smoked paprika, salt, and pepper). Whisk them together thoroughly until well combined. This ensures all the flavors are evenly distributed and ready to infuse your salmon.

Step 2: Cut and Marinate the Salmon. Begin by cutting your salmon fillets into approximately 1-inch cubes or pieces. Aim for as uniform a size as possible, as this helps ensure even cooking. Place the salmon pieces into a medium bowl, then pour the prepared marinade over them. Gently toss the salmon with the marinade until every piece is fully coated. Allow the salmon to marinate for up to 30 minutes. It’s crucial not to let it sit for longer than that, as the acid from the lemon juice can start to “cook” the salmon, causing it to become mushy.

Step 3: Arrange in the Air Fryer. Once marinated, carefully transfer the salmon bites to your air fryer basket, arranging them in a single layer. Overcrowding the basket will lead to steamed salmon rather than crispy, so work in batches if necessary to ensure optimal air circulation. (I typically do not preheat my air fryer for this recipe, but if you prefer to preheat, your cooking time may be slightly reduced).

Step 4: Air Fry to Perfection. Set your air fryer to 400°F (200°C) and cook the salmon bites for approximately 7-10 minutes. Halfway through the cooking time (around 3-5 minutes), you can optionally shake the basket or turn the pieces with tongs to promote even browning. The salmon is perfectly cooked when the outside is golden brown and crisp, and the internal temperature reaches 145°F (63°C), or to your desired level of doneness. Use a meat thermometer for accuracy.

Mayo, sweet chili sauce, sriracha and honey in glass bowl.

Step 5: Prepare the Bang Bang Sauce. While the salmon is cooking, it’s the perfect time to whisk together the star of the show – the Bang Bang Sauce! In a separate small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar. Whisk vigorously until the sauce is smooth and creamy. Taste and adjust the amount of sriracha to achieve your desired level of spiciness.

Whisk in stirred bang bang sauce in small glass dish.

Step 6: Rest, Sauce, and Serve. Once the salmon bites are cooked to perfection, remove them from the air fryer and allow them to rest for 3-5 minutes. This resting period helps the juices redistribute, ensuring the salmon remains tender and moist. Finally, serve the warm salmon bites with a generous drizzle of the homemade Bang Bang Sauce. Garnish with a sprinkle of chopped green onions or sesame seeds if desired, and enjoy!

Expert Tips for Flawless Air Fryer Salmon

Achieving perfectly cooked salmon bites in your air fryer is simple with a few key considerations:

  • Uniformity is Key: For truly even cooking, it’s essential to cut your salmon into pieces that are as uniform in size and shape as possible. This ensures that all pieces finish cooking around the same time, preventing smaller pieces from drying out while larger ones are still cooking. If you do end up with a few smaller pieces, simply remove them from the air fryer when they are done and allow the larger pieces to cook for a minute or two longer until they reach the desired doneness.
  • To Preheat or Not to Preheat? For this particular recipe, I often skip preheating my air fryer. This makes it easier to arrange the individual salmon pieces in the basket without rushing, and I find it helps prevent the smaller pieces from over-searing or overcooking while I’m still loading the rest. However, if you prefer to preheat, be aware that your overall cooking time might be slightly reduced. Always keep a close eye on your salmon.
  • Mind the Marinade Time: Salmon is a delicate protein, and prolonged exposure to acidic ingredients can alter its texture. Therefore, it is crucial not to marinate the salmon for longer than 30 minutes. The lemon juice in the marinade, while adding wonderful flavor, can begin to “cook” the salmon if left too long, resulting in a mushy or mealy texture. Stick to the recommended 30-minute window for the best results.
  • Watch Your Cook Time: Air fryers can vary significantly in their power and efficiency. The cooking times provided are estimates, so it’s vital to stay near your air fryer and monitor the salmon closely, especially if it’s your first time making this recipe. Learn your appliance’s nuances, and adjust the cooking duration as needed to achieve that ideal crispy exterior and flaky interior without overcooking. A meat thermometer inserted into the thickest part of a salmon bite should read 145°F (63°C) for medium-cooked salmon.

Storage and Reheating Tips

Having leftovers of these delicious salmon bites is a real treat! Here’s how to store and reheat them to maintain their best quality:

Refrigeration: Store any leftover salmon bites in an airtight container in the refrigerator for up to 3-4 days. The Bang Bang Sauce can also be stored separately in an airtight container in the fridge for about a week.

Reheating: For best results, reheat the salmon bites in your air fryer at 350°F (175°C) for just a couple of minutes until warmed through and crispy again. This method helps restore their texture. Alternatively, you can use a conventional oven set to 350°F for about 5-7 minutes, or a microwave for quicker reheating, though the texture might be less crispy.

Freezing: These salmon bites can be frozen for longer storage. Allow them to cool completely after cooking. Then, arrange them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer the salmon bites to a freezer-safe bag or airtight container, wrapping them in foil first for extra protection against freezer burn. They will keep well in the freezer for up to 3 months. When ready to enjoy, thaw them in the refrigerator overnight and reheat as directed above.

Frequently Asked Questions (FAQ)

Can this recipe be made without an air fryer?

Absolutely! Even if you don’t own an air fryer, you can still enjoy these delicious salmon bites. Here are two alternative cooking methods:

  • Baking: Preheat your oven to 400°F (200°C). Arrange the marinated salmon bites in a single layer on a parchment-lined baking sheet. Bake for approximately 12-15 minutes, flipping them halfway through, until they are cooked through and slightly golden.
  • Pan-Searing: Heat a large skillet over medium-high heat with a tablespoon of oil. Once hot, add the salmon bites in a single layer, ensuring not to overcrowd the pan. Sear for about 3-4 minutes per side, until the salmon is golden brown and cooked to your liking.
What is the white stuff that is coming out of my salmon?

Don’t be alarmed if you notice a thick, white substance appearing on your cooked salmon; it’s perfectly normal and safe to eat. This substance is called “albumin,” which is a protein that exists as a liquid in raw salmon but solidifies and gets pushed out to the surface as the fish heats up. While it’s ultimately tasteless and completely fine to consume, you are welcome to gently scrape it off your fish after cooking if you prefer a cleaner aesthetic.

The Health Benefits of Incorporating Salmon into Your Diet

Beyond being incredibly delicious, salmon is a powerhouse of nutrition, making these Air Fryer Salmon Bites a fantastic choice for a healthy meal. Salmon is renowned for being an excellent source of:

  • Omega-3 Fatty Acids: Particularly EPA and DHA, which are crucial for brain health, heart health, and reducing inflammation throughout the body. Regular consumption of omega-3s is linked to a lower risk of chronic diseases.
  • High-Quality Protein: Salmon provides a significant amount of complete protein, essential for muscle repair, growth, and overall body function. Protein also helps keep you feeling full and satisfied.
  • Vitamins and Minerals: It’s packed with B vitamins (especially B12, B6, and niacin), which are vital for energy production and nerve function. Salmon also provides potassium, selenium, and vitamin D, a nutrient often lacking in many diets, which is important for bone health and immune function.

By opting for an air fryer, you also cook with less oil compared to traditional frying methods, further enhancing the health profile of this already nutritious fish. Enjoying these salmon bites is a tasty way to support your overall well-being!

Prep Time: 10 minutes
10 minutes
Total Time: 20 minutes
Servings: 4

Equipment

  • Air Fryer

Ingredients

For the Salmon

  • 1 ½-2 lb center cut salmon fillets, skin removed and cut into approx. 1 inch pieces
  • 2 Tbsp olive oil
  • Juice of half a lemon
  • 1 Tbsp honey
  • 2 Tbsp soy sauce, tamari for gluten free
  • 3-4 garlic cloves, minced
  • ¼ tsp onion powder
  • ¾ tsp smoked paprika
  • ½ tsp pepper
  • ½ tsp sea salt

For the Bang Bang Sauce

  • ½ c mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½ – 1 Tbsp sriracha, vary to desired spice level
  • 2 tsp honey
  • 1 tsp rice vinegar

Instructions

  • Cut salmon into approximately 1-inch cubes/pieces, making them as uniform in size as possible. Add them to a medium bowl.
  • Combine all of the salmon marinade ingredients in a small bowl and whisk well.
  • Toss the marinade with the salmon to fully coat. Marinate for up to 30 minutes, but do not let this sit for more than that as the acid in the lemon will cause the salmon to become mushy.
  • Add the salmon bites to the air fryer basket in a single layer. You can work in batches if needed. (I do not preheat my air fryer, but you can if preferred; cook time may be a bit less).
  • Set air fryer to 400°F (200°C) and air fry for about 7-10 minutes. Turning or shaking halfway through is optional. Salmon is ready when the outside is brown and crisp, and the internal temperature reads 145°F (63°C) or desired doneness.
  • While the salmon cooks, whisk the bang bang sauce ingredients together and adjust spiciness to taste.
  • When salmon is cooked, allow to rest for 3-5 minutes before serving with a generous drizzle of bang bang sauce. Enjoy!

Notes

Storage: Store leftover salmon bites in an airtight container in the refrigerator for about 3-4 days. The bang bang sauce will keep for about a week in the fridge. Reheat for a couple minutes in the air fryer! The salmon bites can be frozen. Allow them to cool completely and then wrap in foil and then add to a freezer-safe bag and freeze for up to 3 months.

Cut the salmon in uniform sized pieces. The closer the salmon pieces are in shape and size, the more evenly they will cook. If some pieces are much smaller, that is okay; just remove them when finished cooking and then cook the larger pieces a bit longer.

I don’t preheat my air fryer when making this recipe to make it easier to add the salmon since it takes a minute to get all the individual pieces in and I don’t want to risk overcooking some pieces as they sear while adding the rest.

Do not marinate the salmon longer than 30 minutes. Salmon marinated in anything with acidic ingredients can have a negative impact on it if it sits longer than 30 minutes. The acidic qualities of the lemon juice will cause the texture of the salmon to become mushy if left too long.

Stay close to the air fryer to make sure you don’t overcook it. Air fryers are all a bit different. You know your air fryer best, so adjust the time as needed.

Nutrition is based off an 8 oz. serving of salmon and 2 tablespoons of bang bang sauce. A typical serving recommendation for salmon is about 6 ounces, so this is slightly larger than an average serving.
