Detailed Ingredient Notes for Perfect Cookies
For the complete list of ingredients and their precise measurements, please refer to the detailed recipe card located further down the page. Understanding the role of each ingredient can help you achieve the best results and even inspire creative substitutions.

- I predominantly use maple syrup as the primary sweetener in these Cinnamon Roll Oatmeal Breakfast Cookies. Its rich, natural flavor complements the cinnamon beautifully, adding a depth that refined sugars can’t quite match. However, if you prefer or have on hand, honey or another liquid sweetener can be used as a suitable alternative. Adjust the amount slightly based on the sweetness level you desire.
- Quick Oats: While I have experimented with rolled oats in this recipe, my strong preference is for quick oats. Quick oats provide a smoother, more uniform texture, which helps the cookies hold their shape better and creates a more delicate chew. If you only have old-fashioned rolled oats, don’t worry! You can easily transform them into quick-cooking oats by pulsing them a couple of times in a food processor. This simple trick will give you a similar texture without needing a separate trip to the grocery store.
- Flour: For this particular recipe, I opted for white whole wheat flour. This choice offers a slightly lighter texture and a subtly sweeter, milder flavor compared to regular whole wheat flour, while still retaining the nutritional benefits of whole grains. If white whole wheat flour isn’t available, or if you simply prefer, all-purpose flour works wonderfully as well. I’ve personally made these Oatmeal Cinnamon Cookies numerous times with standard all-purpose flour, and they always turn out fantastic and flavorful.
Exciting Recipe Variations to Customize Your Cookies
One of the best aspects of these Cinnamon Roll Oatmeal Breakfast Cookies is how easily they can be customized to suit your taste or what you have on hand. Here are some creative ideas to inspire your next batch:
- Elevate with delightful add-ins: Boost the flavor and texture by mixing in extras like white chocolate chips for a sweet contrast, classic chocolate chips for a rich treat, chopped pecans or walnuts for a nutty crunch, or dried fruits such as raisins or dried cranberries for added chewiness and tang. Feel free to combine a few of your favorites!
- Experiment with warm spices: While cinnamon is the star, don’t hesitate to enhance the spice profile. A touch of nutmeg can add warmth, ginger a subtle zing, allspice a complex aroma, or cloves a deeper, spicier note. For a truly seasonal twist, especially in autumn, replace or complement the cinnamon with pumpkin spice for a comforting fall-themed cookie. You can even sprinkle a pinch of cinnamon directly into your icing drizzle for an extra layer of flavor!
- Make them gluten-free: Adapting this recipe for gluten sensitivities is straightforward. Simply ensure you use certified gluten-free oats and an all-purpose 1:1 gluten-free flour blend. These substitutions will allow everyone to enjoy these delicious breakfast cookies without compromise.
- Transform the icing: The simple icing drizzle is wonderful, but you can make it even more luxurious. For a richer, tangier glaze, soften a bit of cream cheese and whisk it into the powdered sugar and milk. Adding a touch of maple syrup to the icing will enhance its richness and complement the cookie’s flavor. A small pat of melted butter can also make the icing smoother and more decadent.
Easy Step-By-Step Instructions to Bake Your Cookies
Follow these clear, concise steps to create perfectly soft and flavorful Cinnamon Roll Oatmeal Breakfast Cookies. You’ll be enjoying these delightful treats in no time!

Step 1: Combine Wet Ingredients. In a spacious mixing bowl, thoroughly whisk together the large egg, vegetable or canola oil, pure maple syrup, fragrant vanilla extract, and slightly cooled melted butter. Continue whisking until all these liquid components are fully incorporated and smooth.

Step 2: Prepare Dry Ingredients. In a separate, medium-sized bowl, combine the quick oats, your chosen flour (white whole wheat or all-purpose), aromatic cinnamon, a pinch of salt, and the baking powder. This separation ensures even distribution of the leavening agent.

Step 3: Whisk Dry Ingredients. Use a whisk to thoroughly combine the dry ingredients from Step 2. It’s crucial to stir well to evenly disperse the baking powder and cinnamon, ensuring consistent texture and flavor throughout your Oatmeal Breakfast Cookies.

Step 4: Combine Wet and Dry. Gently add the whisked dry ingredients into the bowl containing the wet ingredients. Stir well with a spatula or wooden spoon until just combined; be careful not to overmix. If the batter appears too thin or loose, you can incrementally add a tablespoon or two more quick oats to firm it up. The ideal batter should be easily scoopable onto a baking sheet, holding its shape without being overly runny or stiff.

Step 5: Scoop and Flatten. Using a cookie scoop or two spoons, place uniform portions of dough onto a baking sheet lined with parchment paper. Gently press down on each dough ball to flatten it slightly. These Cinnamon Roll Breakfast Cookies don’t spread much during baking, so flattening them ensures a more traditional cookie shape and a less cakey texture. If you skip this step, they might bake up a bit puffier.

Step 6: Bake to Perfection. Bake the cookies in your preheated oven for approximately 8-10 minutes. Look for them to be set in the center and just beginning to turn a very slight golden brown around the edges. It’s always better to slightly underbake these Cinnamon Oatmeal Cookies than to overbake them, as overcooking can quickly lead to a dry and crumbly texture. A slightly gooey center is perfectly fine!

Step 7: Prepare the Icing Drizzle. While the cookies are cooling, whisk together the powdered sugar, whole milk, and vanilla extract for the icing glaze in a small bowl. Start with the smaller amount of milk and add more gradually, a few drops at a time, until you reach your desired thickness and consistency. You want it smooth enough to drizzle but thick enough to hold its shape.

Step 8: Drizzle and Set. Once the cookies have cooled completely, generously drizzle the prepared icing over their tops. For a more decadent coating, you can double the icing ingredients and dip the entire top surface of each cookie into the glaze. Allow the icing to set for a few minutes before serving, which will create a slightly firm, sweet crust.
Expert Tips for the Best Breakfast Cookies
- Avoid Overbaking at All Costs: This is arguably the most crucial tip for moist and tender Cinnamon Roll Oatmeal Breakfast Cookies. Trust the baking time and visuals! It is significantly better to remove them from the oven a minute too early than a minute too late. Overbaked cookies will lose their delightful soft-baked texture and become unpleasantly dry and crumbly. They continue to cook slightly on the hot baking sheet even after removal, so a slightly soft center is ideal.
- Cookie Yield May Vary: The exact number of cookies this recipe yields can differ based on the size you scoop. Typically, using a standard cookie scoop, you should get approximately 16-18 consistently sized cookies. If you don’t have a scoop, simply roll the dough into roughly 1 ½-inch balls and then gently press them down onto the parchment-lined baking sheet. This ensures a uniform size and even baking.
- Room Temperature Ingredients for Best Results: While not strictly necessary for this no-mixer recipe, using room temperature butter and egg can contribute to a more uniform batter and a slightly better texture in your finished cookies.
- Parchment Paper is Your Friend: Always line your baking sheets with parchment paper. This prevents sticking, promotes even baking, and makes for incredibly easy cleanup.
- Cool Completely Before Icing: For the neatest and best-looking icing drizzle, ensure your cookies are completely cool before applying the glaze. If the cookies are warm, the icing will melt and absorb, rather than creating a distinct, attractive layer.
Storage & Freezing Instructions for Your Convenience
Proper storage is key to maintaining the freshness and deliciousness of your Cinnamon Roll Oatmeal Breakfast Cookies. These cookies are fantastic for meal prepping or simply enjoying over several days.
To store leftover cookies, place them in an airtight container and keep them at room temperature for approximately 3-4 days. I personally find that storing them in the refrigerator can cause them to lose some of their delightful moisture, resulting in a drier texture. For this reason, I much prefer to keep them at room temperature. If you prefer a warm cookie, simply pop one in the microwave for a few seconds before serving to revive that freshly baked aroma and softness.
These Cinnamon Roll Cookies also freeze exceptionally well, making them an excellent candidate for batch baking and future enjoyment. To freeze, first ensure they have cooled completely and that the icing drizzle has fully set. Once cooled, arrange the cookies in a single layer on a baking sheet and freeze for about an hour. This step prevents them from sticking together. After this initial freeze, transfer the now firm cookies to a freezer bag or a freezer-safe airtight container. They can be stored in the freezer for up to 2-3 months. When you’re ready to enjoy them, simply thaw at room temperature or gently warm in the microwave.

Serving Suggestions & Why These Cookies Are the Perfect Breakfast Solution
These Cinnamon Roll Oatmeal Breakfast Cookies are fantastic on their own, but they also pair wonderfully with a variety of beverages and accompaniments. Enjoy them with a hot cup of coffee or tea for a comforting morning treat, or serve alongside a glass of milk for a classic pairing. For a more substantial breakfast, complement them with a side of fresh fruit or a dollop of Greek yogurt. Their wholesome oats and satisfying flavor make them a great option for a quick, nutritious start to your day, especially when you need something convenient and delicious.
In today’s fast-paced world, finding time for a proper breakfast can be a challenge. That’s where these breakfast cookies shine. They offer the warm, comforting taste of a homemade meal without the extensive preparation time. They’re perfect for busy mornings, grab-and-go school lunches, or even as a post-workout snack. The balanced combination of oats, a touch of sweetness, and flavorful cinnamon provides sustained energy, making them a smart choice for anyone looking for a wholesome and appealing breakfast option.
Frequently Asked Questions (FAQs)
Here are some common questions about making and enjoying your Cinnamon Roll Oatmeal Breakfast Cookies:
- Can I make these cookies ahead of time? Absolutely! These cookies are perfect for meal prepping. You can bake them ahead and store them as directed, or even freeze them for longer storage. They thaw beautifully and are just as delicious.
- Are these cookies healthy? With wholesome oats, natural maple syrup, and whole wheat flour options, these cookies offer a more nutritious alternative to many traditional breakfast pastries. They provide fiber and sustained energy, making them a great choice for a balanced start to your day.
- What if my batter is too sticky or too dry? The consistency of your batter can sometimes vary slightly depending on humidity or how your ingredients are measured. If the batter seems too sticky to scoop, try adding a tablespoon or two more quick oats. If it feels too dry and crumbly, add an extra teaspoon of milk or a tiny bit more oil until it comes together.
- Can I use steel-cut oats? No, steel-cut oats have a different texture and cooking time, and will not work well in this recipe. Quick oats or old-fashioned rolled oats (pulsed to quick-oat size) are essential for the correct cookie texture.
- How can I make the icing thicker or thinner? For a thicker icing, add more powdered sugar a tablespoon at a time. For a thinner, more liquid icing, add milk a half teaspoon at a time until you reach your desired consistency.

Cinnamon Roll Breakfast Cookies
Lorie Yarro
10 minutes
11 minutes
30 minutes
16 cookies
Ingredients
- ¼ cup unsalted butter, melted and cooled slightly
- ½ c pure maple syrup
- 2 Tbsp oil, canola or vegetable
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups quick oats
- ¾ cup all-purpose flour, (I used white whole wheat flour in original recipe)
- ½ T cinnamon
- 1 tsp baking powder
- ½ tsp sea salt
Icing Drizzle
- ½ c powdered sugar
- 1 -2 tsp whole milk
- ¼ tsp vanilla
Instructions
-
Preheat oven to 350°F (175°C).
-
In a medium bowl, whisk together egg, oil, maple syrup, vanilla extract, and melted butter until fully incorporated and smooth.
-
In another bowl, thoroughly mix the quick oats, flour, salt, baking powder, and cinnamon. Ensure all dry ingredients are evenly distributed.
-
Add the combined dry ingredients into the wet ingredients bowl and stir just until combined. Be careful not to overmix.
-
Spoon dollops of cookie dough onto a parchment-lined baking sheet. Gently press each cookie dough portion to flatten it slightly, as they will not spread much during baking. Bake for 8-10 minutes, or until the edges are just starting to turn a very light golden brown and the centers are set.
-
Allow the baked cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely for 10-15 minutes.
-
For the best results and a clean drizzle, ensure cookies are completely cool before icing. Whisk the powdered sugar, milk, and vanilla extract for the drizzle until smooth, adjusting milk for desired consistency. Transfer the icing to a small plastic bag, snip a tiny corner, and drizzle over each cookie. Alternatively, use a spoon for drizzling.
Notes
Storage: Store leftover cookies in an airtight container for about 3-4 days at room temperature. I feel that the cookies lose moisture when stored in the refrigerator and prefer them room temperature. You can warm them up in the microwave for a few seconds before serving.
Do not over bake these. Trust me! It is better to take them out too early than too late. They will be super dry and nobody wants that!
The number of cookies that this recipe yields can vary. I usually get about 16-18 cookies using a cookie scoop. You can certainly just roll into about 1 1/2 inch balls and then press instead of using a scoop.
