Ingredients

For the Chicken

  • 3-4 chicken breast, 1 ½ – 2 lb.
  • 2 T olive oil
  • ½-1 tsp sea salt, more or less as desired
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • 1 tsp cracked pepper, adjust as desired
  • ½ tsp oregano

For the Mango Salsa

  • 2 mangoes, diced (or about 3 cups diced mango)
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and diced
  • 2 T red onion, small diced
  • Juice of 1 lime
  • 1 tsp lime zest
  • ⅓ c cilantro, loosely packed and chopped
  • ¼ tsp sea salt

Instructions

  1. Preheat oven to 425°F (220°C). Place the chicken breasts in a 9X13 baking dish. Pound the chicken to a similar thickness (about 1 inch) for even cooking.
  2. Brush olive oil on both sides of each chicken breast. Salt as desired and then whisk together the other seasonings (garlic powder, chili powder, cumin, smoked paprika, oregano, cracked pepper) and sprinkle evenly on both sides of the chicken.
  3. Bake for about 17-22 minutes or until chicken reaches an internal temperature of 165°F (74°C). (Thicker chicken breasts may take longer, so adjust cooking time if your chicken is more than an inch in thickness.)
  4. While chicken is baking, combine all salsa ingredients (diced mango, red bell pepper, jalapeño, red onion, lime juice, lime zest, cilantro, and sea salt) in a bowl. Toss gently. Add a touch of cracked pepper if desired. Chill the salsa until the chicken is cooked.
  5. When chicken is done, remove from oven, allow to rest for 5 minutes. Serve with a generous spoonful of mango salsa, perhaps alongside rice or your favorite sides.
  6. To Grill the Chicken: Preheat your grill to medium-high heat. Lightly oil the grates and cook the chicken for about 8-10 minutes per side, ensuring an internal temperature of 165°F (74°C) is reached.
