Navigating the world of gluten-free baking can often feel like a culinary quest, but when you stumble upon a truly spectacular recipe, the reward is immeasurable. They represent the culmination of countless trials and dedicated effort, ensuring every bite delivers that perfect chewy texture and an explosion of chocolatey goodness. We believe everyone deserves to enjoy a freshly baked cookie without compromise.

Almond flour has become a staple in our kitchen for its unique flavor profile and versatility. It imparts a delicate sweetness and tender crumb that other flours simply can’t replicate. From our beloved Gluten-Free Blondies, which we bake at least once a month, to our popular Banana Chip Almond Flour Muffins, this incredible flour never ceases to impress. Its natural richness elevates these oatmeal cookies, making them undeniably special.

Why These Gluten-Free Almond Flour Oatmeal Cookies Are a Must-Try:

  • Effortless Preparation: This recipe is designed for simplicity. You won’t find any complicated techniques or obscure ingredients here. The process involves creaming butter and sugars, incorporating wet ingredients, then folding in the dry components, oats, and chocolate chips. It’s a straightforward method that’s perfect for bakers of all skill levels, even those with little helpers eager to join in the fun!
  • Wonderfully Freezer-Friendly: Prepare a larger batch and save some for later! Both the raw cookie dough and the baked cookies freeze beautifully. You can easily bake the dough straight from frozen—just add an extra 3-4 minutes to the baking time and keep a watchful eye. We recommend rolling the dough into individual balls before freezing for maximum convenience. This means warm, fresh cookies are always just minutes away.
  • No Chilling Required for Instant Gratification: Our goal was to create a truly irresistible cookie that doesn’t demand patience. After several recipe iterations, we adjusted the flour ratio slightly to achieve a dough that holds its shape without any refrigeration. This means you can mix, scoop, and bake without the frustrating wait, enjoying a perfectly chewy texture right away.
  • Endless Customization with Add-Ins: These cookies are a fantastic canvas for your favorite mix-ins! While chocolate chips and chunks are a classic choice, feel free to get creative. Consider adding plump raisins, chopped nuts (like pecans or walnuts), white chocolate chips, dried cranberries, or even a sprinkle of sea salt on top for a delightful sweet and salty contrast. The possibilities are truly limitless!
  • Perfect Texture Every Time: Expect a cookie that’s delightfully chewy in the center with slightly crisped edges. The combination of almond flour and rolled oats creates a unique texture that’s both satisfying and comforting, a hallmark of a truly great oatmeal cookie.
  • Naturally Gluten-Free Goodness: For those managing gluten sensitivities or celiac disease, finding delicious and reliable gluten-free recipes can be a challenge. This recipe uses naturally gluten-free ingredients, ensuring a safe and enjoyable treat for everyone.

Essential Ingredients and Thoughtful Substitutions:

  • Finely Ground Almond Flour: This is key! Always opt for finely ground almond flour, which is made from blanched, skinless almonds. Avoid almond meal, which is coarser and includes the skins, leading to a different texture in your cookies. The fine texture of almond flour contributes to the tender crumb of these cookies.
  • Baking Soda: A crucial leavening agent that helps the cookies spread and achieve their signature chewy texture. Ensure your baking soda is fresh for optimal results; an expired leavening agent can result in flat, dense cookies.
  • Sea Salt: We prefer sea salt for its subtle mineral notes that enhance the chocolate and oat flavors. A sprinkle of flaky sea salt on top after baking can also elevate the taste. Standard table salt works too, but consider reducing the quantity by half if using salted butter.
  • Granulated Sugar & Light Brown Sugar: This winning combination provides the perfect balance of sweetness and moisture. Granulated sugar contributes to crispiness, while light brown sugar adds a lovely caramel note and promotes chewiness.
  • Unsalted Butter: Using unsalted butter allows you to control the overall salt content in the recipe. If you only have salted butter on hand, remember to halve the amount of added sea salt to prevent your cookies from becoming too salty. Ensure it’s softened to room temperature for proper creaming.
  • High-Quality Vanilla Extract: Vanilla is more than just a flavor; it’s a foundation. A good quality vanilla extract will significantly boost the overall aroma and taste of your cookies.
  • Large Egg: An essential binder that adds moisture and helps the cookies hold their shape. A room-temperature egg incorporates more easily into the butter mixture, creating a smoother dough.
  • Certified Gluten-Free Rolled Oats (Old-Fashioned Oats): While oats are naturally gluten-free, cross-contamination with gluten-containing grains can occur during processing. For strict gluten-free diets, always choose oats explicitly labeled as “certified gluten-free oats.” Rolled oats provide a wonderful chewiness and classic oatmeal cookie texture. Quick oats haven’t been tested in this recipe, and steel-cut oats are not suitable for cookies.
  • Chocolate Chips & Chunks: We love a mix of dark chocolate chips and chopped dark chocolate chunks for varying textures and intense flavor. The chunks create beautiful pools of melted chocolate throughout the cookies. Feel free to use milk chocolate chips or semi-sweet chips based on your preference. The more chocolate, the better!

  • Step 1: Cream Wet Ingredients. In a spacious mixing bowl, use an electric mixer to thoroughly cream together the softened unsalted butter, granulated sugar, and light brown sugar. Beat on medium speed for about 3-4 minutes until the mixture becomes visibly light, fluffy, and pale in color. This step is essential for incorporating air, which contributes to the cookies’ texture. Next, beat in the large egg and vanilla extract, mixing just until they are fully incorporated. Avoid overbeating the egg at this stage.
  • Step 2: Combine Dry Ingredients. In a separate bowl, whisk together the finely ground almond flour, baking soda, and sea salt. Ensure these dry ingredients are well combined to distribute the leavening evenly throughout the dough.
  • Step 3: Form the Dough. Gradually add the dry ingredient mixture to the wet mixture, mixing on low speed until just combined. Be careful not to overmix, as this can lead to tougher cookies. Once the flour is mostly incorporated, fold in the certified gluten-free rolled oats and your chosen chocolate chips or chunks. Stir gently with a spatula until the oats and chocolate are evenly distributed throughout the dough.

  • Step 4: Scoop and Bake. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking. Using a cookie scoop or your hands, roll the dough into uniform balls and place them about 2 inches apart on the prepared baking sheet. For an extra touch of indulgence and visual appeal, press a few additional chocolate chips or chunks onto the top of each cookie dough ball before baking.
  • Step 5: Golden Perfection. Bake for 10-13 minutes, or until the edges are lightly golden brown. The centers of the cookies may still appear slightly soft and puffed, but this is exactly what you want for that perfect chewy texture. Do not overbake!
  • Step 6: Cool and Enjoy. Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5-7 minutes. This crucial step allows them to set and firm up before you transfer them to a wire rack to cool completely. Enjoy your warm, freshly baked gluten-free almond flour oatmeal chocolate chip cookies!

Expert Tips for Gluten-Free Cookie Success:

  • Managing Dough Temperature: If your cookie dough feels too warm or appears overly soft, it might lead to excessive spreading during baking. This often happens if the butter was too soft to begin with or the kitchen is particularly warm. Simply chill the dough in the refrigerator for about 15-30 minutes until it firms up a bit. This will help maintain their shape.
  • Accurate Almond Flour Measurement: Precision in baking is key, especially with gluten-free flours. If you’re not using a kitchen scale (highly recommended for best results!), avoid scooping your measuring cup directly into the almond flour container. Instead, first stir the almond flour in its container with a spoon to aerate it. Then, gently spoon the flour into your measuring cup until it overflows, and level it off with a straight edge like a knife. Scooping directly can compact the flour, leading to too much flour and a potentially dry, crumbly cookie that won’t spread properly.
  • Baking from Chilled Dough (If Desired): Although this recipe doesn’t require chilling, if you prefer to make the dough ahead of time or do decide to chill it, roll the dough into balls first. Place the cookie dough balls on a baking sheet and chill. When you’re ready to bake, allow the dough balls to sit at room temperature for about 15 minutes before placing them in the oven. This helps them bake more evenly.
  • Achieving Your Desired Cookie Texture:
    • For a Softer, Chewier Cookie: Bake closer to the 10-minute mark. The centers will look slightly underbaked and puffed, but they will firm up as they cool, resulting in a wonderfully soft and tender cookie.
    • For a Slightly Crunchier Cookie: Extend the baking time to the full 13 minutes. The edges will be more golden brown, and the cookies will have a crispier texture.
  • Don’t Overmix the Dough: Once you add the dry ingredients to the wet, mix only until just combined. Overmixing can develop the gluten-like proteins in oats and other ingredients, leading to a tougher cookie.

Storage Instructions:

These delectable chewy oatmeal cookies will retain their freshness and soft texture when stored in an airtight container at room temperature for approximately 4-5 days. To extend their softness even further, you can place a slice of white bread inside the container; the cookies will absorb moisture from the bread, keeping them moist.

For longer storage, ensure the cookies are completely cooled before freezing. Place them in a freezer-safe container or a heavy-duty freezer bag for up to 3 months. Thaw at room temperature or warm briefly in the oven for a freshly baked taste.

To Freeze the Cookie Dough:

Scoop and roll the cookie dough into individual balls. Arrange them in a single layer on a plate or tray and flash freeze for about 2 hours, or until solid. Once frozen, transfer the dough balls to a freezer-safe sealed container or bag. The cookie dough can be stored for up to 3 months.

When you’re ready to bake, you can either allow the dough to thaw completely at room temperature before baking as directed, or bake them directly from frozen. If baking from frozen, add approximately 3 minutes to the total baking time.

Delightful Optional Add-Ins:

Elevate these chewy gluten-free cookies even further by incorporating your favorite mix-ins. Experiment with any of the following to create unique flavor combinations:

  • Sweet dried cranberries for a tart counterpoint.
  • Classic raisins or golden raisins for natural sweetness.
  • Creamy peanut butter chips for a nutty twist.
  • Crunchy chopped pecans or walnuts for added texture and flavor.
  • Colorful M&Ms for a fun, playful touch, especially for kids.
  • Spicy candied ginger for an unexpected zing.
  • Rich butterscotch chips for a warm, caramel-like note.
  • A blend of different chocolate varieties (milk, white, dark) for a multi-layered chocolate experience.

Servings:

30 cookies

Ingredients

  • ½ c unsalted butter, one stick, softened to room temperature
  • ½ granulated sugar
  • ½ c light brown sugar, packed
  • 1 ¾ c almond flour (168 g)
  • ½ tsp sea salt
  • ¾ tsp baking soda
  • 1 large egg
  • 1 tsp vanilla extract
  • c gluten free rolled oats
  • 1 ½ c dark chocolate chips or chunks, about 2 cups if adding chips on top

Instructions

  • Preheat oven to 350°F (175°C). Line a cookie sheet with parchment paper.
  • In a medium bowl, use an electric mixer to cream the softened butter, granulated sugar, and light brown sugar until light and fluffy. This should take 3-4 minutes. Add in the vanilla extract and large egg and beat until just incorporated.
  • In a separate bowl, whisk together the almond flour, sea salt, and baking soda. Add half of the dry mixture at a time to the wet ingredients and beat on low speed to incorporate. Avoid overbeating the mixture. Fold in the rolled oats and chocolate chips or a mixture of chips and chunks with a spatula.
  • Roll the cookie dough into balls or scoop with a cookie scoop onto the parchment-lined cookie sheet, spacing them 2 inches apart from each other. Bake for 10-13 minutes or until the edges are lightly golden. The centers of the cookies may still appear soft and slightly undone, but this is perfectly normal for a chewy cookie.
  • Remove from oven and allow to cool on the cookie sheet for several minutes before transferring to a wire rack to cool completely. Store leftover cookies in a tightly sealed airtight container at room temperature for about one week.

Notes

  • If the cookie dough is too warm, the cookies will spread more than desired. This can occur if the butter is over-softened or the ambient temperature is high. Simply chill the dough for about 15-30 minutes until it firms up.
  • When measuring almond flour, if you are not using a kitchen scale, first stir the flour with a spoon to aerate it. Then, spoon it into your measuring cup and level with a knife. Scooping the measuring cup directly into the container can compact the flour, leading to inaccurate measurements and potentially cookies that don’t spread correctly due to too much flour.
  • If chilling the dough or preparing it ahead of time, roll it into balls before chilling. Allow the dough balls to sit out for about 15 minutes to return closer to room temperature before baking for best results.
  • For a softer cookie, bake closer to the 10-minute mark, removing them just before they appear fully “done.” For a crunchier oatmeal cookie, bake closer to 13 minutes, allowing them to brown a bit more.
