Cheesy Zucchini Tots: A Family Favorite for Healthy Eating

Say hello to Sam, our adorable ten-month-old food critic! He was absolutely thrilled to be a part of this post, especially since it revolved around one of his favorite pastimes: eating. August is widely recognized as Kids Eat Right month, and this year’s important message emphasizes getting children actively involved in the kitchen. The benefits of this engagement are profound and long-lasting, shaping healthier eating habits from an early age.

From my own childhood, I fondly remember being the kid who always wanted to help in the kitchen. I loved every aspect of food preparation – well, almost every aspect. I’ll admit, the cleanup part was never my favorite, and honestly, that hasn’t changed much over the years! My early involvement likely contributed to my deep appreciation for vegetables and a distinct lack of dinner-table arguments over eating them. While genetics certainly play a role in food preferences, it’s undeniably true that the more you empower children to participate in meal preparation and general kitchen activities, the more enthusiastic and adventurous they become about trying new foods, including those all-important vegetables.

We introduced Sam to solid foods the day he turned six months old. The initial weeks were quite an adventure – and spectacularly messy! However, he quickly adapted and now happily eats almost anything we offer him. Witnessing his journey of culinary discovery has been truly incredible and immensely rewarding. It reinforces our belief in the power of early exposure and positive food experiences.

Tips for Involving Children in the Kitchen: Age-Appropriate Engagement

When I first joined this wonderful group of women to champion the Kids in the Kitchen movement, I pondered how to genuinely involve Sam, given his young age. As a “helper,” his current expertise lies in enthusiastically opening every cabinet and drawer, emptying their contents onto the floor. For a ten-month-old, this is perfectly normal and exactly what you’d expect from a curious explorer in the kitchen.

But the truth is, for Sam, his role as a “kid in the kitchen” right now is all about exploration. It’s about sensory learning and making connections with the world around him, especially when it comes to food. Every mealtime, every moment we spend at the kitchen table, becomes a valuable opportunity. We present him with new foods, allowing him to feel their textures, taste their unique flavors, and yes, often squeeze them through his tiny fingers – a common, albeit messy, part of his sensory development. Through these experiences, he begins to learn his likes and dislikes, building his own food preferences.

For a young child like Sam, the kitchen is a vibrant sensory playground. His little brain is constantly working hard, absorbing all the sights, smells, tastes, and textures. Each new food experience adds to his growing repertoire, forging crucial connections across all his senses. While he’s not yet ready to chop vegetables or stir a pot, we can still foster his love for food by allowing him to explore safely. This could mean letting him touch ingredients, watch us prepare meals, or even just sit near the counter as we cook, observing the process.

To celebrate this month’s campaign, I decided to introduce Sam to a brand-new food experience while we spent time together in the kitchen. Soon enough, he’ll be old enough to actively help with tasks like mixing and stirring. For now, our kitchen time together is more like playful discovery, laying a strong foundation for a lifetime of healthy eating habits and culinary adventures.

Zucchini Tots: A Delicious and Easy Way to Boost Vegetable Intake

These Cheesy Zucchini Tots are an absolute godsend for early eaters because their bite-sized shape makes them incredibly easy for tiny hands to grab and hold onto. They ingeniously incorporate zucchini, offering a fantastic and often stealthy way to introduce more vegetables into your family’s diet, especially those greens that might not be as appealing when served raw. While handing Sam a piece of raw zucchini might not elicit the most enthusiastic response, transforming it into a savory, veggie-packed tot dramatically increases the likelihood of a successful and happy mealtime.

Even before I whipped up these delightful tots, Sam had already demonstrated a surprising fondness for a variety of vegetables. Green beans and peas consistently topped his list of favorites, closely followed by carrots and broccoli. This child devours green beans by the fistful, sometimes requiring a gentle nudge to slow his enthusiastic consumption! Just the other night, he fussed whenever there were fewer than ten peas left on his plate, a clear sign that he truly takes after his mama when it comes to loving veggies.

Initially, he was quite keen on avocado, but his preferences have evolved, proving that even at a young age, children develop distinct tastes. It’s always a joy and a fascinating experience to introduce him to something entirely new and observe his reactions. When I placed three of these golden-brown tots on his tray, he did precisely what I anticipated he would do first. He meticulously squeezed one between his fingers, clearly deciphering its texture. After a few seconds of examining the little green and yellow bites, he did what he always does with anything he gets his hands on: he popped it into his mouth.

The Ultimate Taste Test: Cheesy Zucchini Tots for the Win!

Initially, I wasn’t entirely certain of his verdict, but when he reached for another tot, and then another, it became abundantly clear: the Cheesy Zucchini Tots were a resounding success! Just a few minutes later, he was actively demanding a refill, and the rest, as they say, is history. His enthusiastic response solidified these tots as a new family staple and a reliable method for incorporating healthy vegetables into his diet.

You could say that Sam serves as my most honest and discerning taste tester. He takes his role quite seriously, holding nothing back in his critiques! Given his enthusiastic approval of these cheesy zucchini tots, I wholeheartedly recommend heading to your kitchen right away to whip up a batch. These aren’t just for toddlers; adults will find them equally irresistible as a healthy side dish, snack, or even an appetizer.

As Sam grows, he will gradually be able to take on more active roles in the kitchen, like helping to shred zucchini, carefully cracking an egg, or even stirring all the ingredients together. For now, he continues to explore and learn something new every day in our bustling kitchen, laying the groundwork for a future full of culinary adventures and healthy habits.

Total Time:

Servings:

4 servings

Ingredients

  • 1 cup zucchini, shredded and packed
  • 1/3 cup shredded cheddar jack cheese
  • 2/3 cup bread crumbs or panko (use gluten-free if needed)
  • 1 large egg
  • 1/2 tsp garlic powder
  • Sea salt and pepper to taste
  • Pinch of crushed red pepper (optional, for a hint of heat)

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.
  2. Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a cheesecloth, a clean thin towel, or a milk bag and squeeze out as much excess liquid as possible. This step is crucial for crispy tots!
  3. In a large mixing bowl, combine the squeezed shredded zucchini, shredded cheddar jack cheese, bread crumbs (or panko), large egg, garlic powder, sea salt, pepper, and an optional pinch of crushed red pepper. Mix all the ingredients thoroughly until well combined.
  4. Form the mixture into small, bite-sized tater tot-like shapes. Arrange them in a single layer on your prepared parchment-lined baking sheet. Ensure there is a little space between each tot for even cooking.
  5. Bake for approximately 15 minutes, or until the tots are lightly golden brown and crispy. For extra crispiness, you can carefully flip them halfway through the baking time, though it’s not strictly necessary.
  6. Allow the cheesy zucchini tots to cool for several minutes before serving. This helps them firm up and prevents them from falling apart. Enjoy them as a delicious and healthy side dish with your favorite dinner, or as a satisfying snack! This recipe yields about 18 tots.

Notes

Feel free to experiment with different types of cheese in this recipe to vary the flavor profile! A sharp cheddar, Monterey Jack, or even a blend with a touch of Parmesan can add a new dimension.
