Creamy Lemon Bars with Graham Cracker Crust Recipe

These luscious, creamy lemon bars with graham cracker crust are a dream for citrus lovers. With a texture similar to key lime pie, they take under 30 minutes to prepare and pair a rich, tart lemon layer with a buttery graham cracker crust and a hint of ginger for depth—perfect for parties, potlucks, or a simple weeknight treat.

I’ve never loved classic lemon bars because the lemon filling often feels too firm and the shortbread can be heavy. So I developed these creamy lemon bars that are closer to a key lime pie in texture—silky, smooth, and truly satisfying.

Instead of a traditional shortbread base, these use a graham cracker crust for a lovely crunch and buttery flavor. The lemon layer is custard-like and velvety thanks to sour cream and sweetened condensed milk. The result is bright, tangy, and unmistakably lemony.

  • A texture that’s creamy and custardy rather than cakey

Ingredient Notes

  • Fresh lemon juice gives the best, brightest flavor—bottled juice won’t compare. You’ll also need the lemons for zest.
  • Be sure to use sweetened condensed milk, not evaporated milk. Condensed milk is thick and sweet and is essential for the filling’s texture and sweetness.
  • Full-fat sour cream is key to the filling’s silky texture and balanced flavor. It keeps the filling creamy without being overly sweet.

Ways To Vary This Recipe

  • Try a different citrus: key lime juice and zest make a delicious variation, or combine lemon and lime for extra complexity.
  • Use a shortbread crust: if you prefer a classic base, a shortbread crust will work in place of the graham cracker crust.
  • Top with fruit: fresh berries, a fruit sauce, or a dollop of whipped cream make lovely finishing touches.

Step 8: Cool on a rack about 30 minutes, then refrigerate for at least 2 hours (3 hours is best) to fully set. Serve plain, dusted with powdered sugar, or topped with whipped cream.

Recipe Tips

Double-check the milk: use sweetened condensed milk, not evaporated milk—the texture and sweetness depend on it.

Room-temperature ingredients: For the smoothest filling, bring eggs, condensed milk, and sour cream to room temperature before mixing.

Chill time matters: You can eat the bars after cooling, but chilling 2–3 hours yields the best texture and clean slices.

Storage

Store in an airtight container in the refrigerator for up to 5 days. To freeze, cool completely, place bars in a freezer-safe container, and freeze up to 3 months. Thaw in the refrigerator before serving.

Ingredients

Crust

  • 14 sheets graham crackers (about 1 ¾–2 cups crumbs)
  • 7 Tbsp unsalted butter, melted, slightly cooled
  • ½ tsp vanilla extract
  • ¼ cup sugar
  • ¼ tsp ground ginger, optional
  • ¼ tsp sea salt

Lemon Filling

  • 2 14-oz. cans sweetened condensed milk
  • 2 large whole eggs, room temperature
  • 2 large egg yolks, room temperature
  • 1 cup freshly squeezed lemon juice
  • 1 Tbsp lemon zest
  • ½ cup sour cream, room temperature

Optional Whipped Cream Topping

  • ¾ cup heavy whipping cream, very cold
  • 2 Tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions

  • Preheat oven to 350°F.
  • Prepare the crust: pulse graham crackers to crumbs, then mix in melted butter, vanilla, sugar, salt, and ginger until combined.
  • Press the crust into a parchment-lined 9×9-inch pan, pressing firmly so it holds together. Bake 10 minutes and let cool slightly.
  • Make the filling: whisk all filling ingredients together until smooth. Room-temperature ingredients give the best texture.
  • Pour the filling over the crust and bake 15–20 minutes, until edges are set and the center still jiggles slightly.
  • Cool on a rack for 30 minutes, then chill in the refrigerator for at least 2 hours, preferably 3.
  • To serve: whip the cream with powdered sugar and vanilla until stiff peaks form, then dollop or pipe on slices and garnish with a lemon wedge.

Notes

Storage: Refrigerate up to 5 days in an airtight container. Freeze fully cooled bars up to 3 months and thaw in the fridge.

Use sweetened condensed milk: evaporated milk won’t produce the same texture or sweetness.

Room temperature ingredients: allow eggs, condensed milk, and sour cream to reach room temperature for a smooth filling.

Chill before slicing: chilling helps the bars set and makes cleaner slices.
