Embracing the Journey: From Heartache to Hope and Wholesome Waffles

The past six weeks have felt like an eternity, a period of intense emotional and logistical challenges that have finally drawn to a close. There’s an immense sense of relief, a deep breath exhaled after holding it for what felt like years. Our journey into adoption has been far more arduous than anything I could have imagined. Many times, I’ve found myself thinking that even the daily shots during fertility treatments were a cakewalk compared to the demands of this process.

The sheer amount of time, effort, and emotional energy required for adoption is truly staggering. My respect for all those who have navigated this path before us has grown immeasurably. It makes me wonder how many more families would choose adoption if the process were just a little less daunting. Perhaps, much like the rigorous first year of nursing or pre-med, it’s designed to test one’s resolve, to ensure only those truly committed see it through.

And I am incredibly proud to say, we were not weeded out. No bureaucratic form, no endless errands across town, no classes filled with expectant parents extolling the virtues of breastfeeding – nothing could deter us. This week, we successfully completed our home study. A profound sigh of relief washes over me. We can now look forward with a renewed sense of ease and anticipation.

Finding Strength in Community: The Warrior Within

During this challenging time, I’ve had the profound fortune of becoming part of a remarkable community of women. I first connected with Liz Shaw of Shaw’s Simple Swaps online, through a mutual friend. I eagerly anticipate the day we can meet in person. Liz, too, has faced her own struggles on the path to parenthood, and through her experiences, she created a vital community for women like me. Her other website, Bumps to Baby, offers a supportive space for those grappling with infertility, fostering connection and support. Liz is dedicated to dismantling the stigma and silence that often surround infertility, a mission I deeply resonate with. Our paths would never have crossed had I not chosen to be vocal about our own story. So, if you are navigating a difficult road, I urge you to speak up, to share your truth. You do not have to walk this path alone. There are so many of us, struggling in silence, and together, we can break that silence.

When Liz invited me to be featured on Bumps to Baby as part of her “Warrior Women Wednesday” series, I was flattered yet apprehensive. Me? A warrior? How could that be? I am the woman who cringes at every new pregnancy announcement. I am the one who goes home and cries when friends share their joyous news. I am the one who skips baby showers to avoid the unbearable pain. I stutter when asked about children, finding the conversation too difficult to bear. How could I possibly be a warrior?

I find myself holding my breath, standing on the sidelines as pregnant friends exchange stories, longing to be part of that conversation, yet consumed by jealousy, envy, and even anger. The casual dismissals – “we weren’t even trying” – or the seemingly effortless pregnancies that appear to happen with a sneeze, sting deeply. Why would anyone consider me a warrior?

I thought about it more deeply, and for a long time, I didn’t want to be a warrior at all. This was not the path I chose, and I didn’t want applause for overcoming adversity or for getting back up after countless setbacks. No, I yearned for the easy ride. “Take this medal back,” I thought, “this girl doesn’t want it.” I wanted to be the one who sneezed and, poof, became pregnant. That’s what I truly desired. A “real” warrior might embrace the challenge, but I wanted to curl up and have everything handed to me. I wished I could trade our winding, difficult road for a smoothly paved, straight, and narrow one. Please and thank you.

However, after much contemplation, and finally letting go of my resistance to the idea, I realized something profound. A true warrior is indeed a fighter and brave, but she is also someone who acknowledges her weaknesses, her lowest points, and her saddest realities. A real warrior doesn’t pretend the journey is easy or without immense challenge. She reveals the rawest, most authentic pieces of it all – not just the sunshine and rainbows. She carries her gold medals alongside the scars and wounds from the battles fought along the way. A true warrior knows both joy and pain, victory and loss, and dares to tell the whole story. And so, I finally came to terms with it. I am a warrior – not because I am inherently brave or a natural fighter. I am a warrior because I refuse to hide; I reveal the lowest of lows, the rawest of raw experiences, every single bit of it. Not for personal glory, but in the hope that perhaps, just perhaps, my story, my journey, might offer a glimmer of help to another navigating their own challenging path. And THAT is the only warrior I ever aspire to be.

Thank you, Liz Shaw. Thank you for helping me discover the true warrior within myself.

After that journey for the soul, let’s now turn our attention to nourishing the body. And these incredible Whole Wheat Carrot Cake Waffles are the perfect addition to your Easter brunch, or any morning you desire a special, wholesome treat. Ingredients

  • 2 eggs, flax eggs if vegan
  • 1 1/2 c almond milk
  • 1 3/4 c whole wheat pastry flour
  • 3 T coconut oil, melted
  • 1-2 T pure maple syrup
  • 1 T baking powder
  • 1 tsp vanilla extract
  • 2-3 tsp cinnamon
  • 1 large shredded carrot
  • 2 T shredded coconut, unsweetened
  • 1/4 c chopped pecans or walnuts
  • 1/4 c golden raisins
  • 1/4 tsp sea salt

Why You’ll Love These Whole Wheat Carrot Cake Waffles

These waffles are not just delicious; they’re packed with wholesome goodness! Made with whole wheat pastry flour, they offer a healthier alternative to traditional waffles without sacrificing flavor or texture. The shredded carrots add natural sweetness and moisture, while cinnamon provides that classic carrot cake warmth. They are incredibly versatile, perfect for a casual family breakfast, a special weekend treat, or an impressive Easter brunch centerpiece. Plus, they’re surprisingly quick to whip up, making them ideal for busy mornings.

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions. Ensure it’s hot and ready for the batter.
  2. In a large bowl, whisk together the wet ingredients: eggs (or flax eggs if making vegan waffles), almond milk, vanilla extract, and melted coconut oil until well combined.
  3. In a separate medium bowl, combine all the dry ingredients: whole wheat pastry flour, pure maple syrup, baking powder, cinnamon, and sea salt. Mix thoroughly to ensure an even distribution.
  4. Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few small lumps are perfectly fine and often result in a tender waffle.
  5. Fold in the shredded carrot, shredded coconut, chopped pecans or walnuts, and golden raisins. Stir just enough to distribute them evenly throughout the batter.
  6. Pour the batter onto your preheated waffle iron, using the appropriate amount for your specific model (usually about 1/2 to 3/4 cup per waffle, depending on size).
  7. Cook the waffles according to your waffle iron’s timeline, or until they are golden brown and crispy on the outside, and cooked through on the inside.
  8. Serve immediately while hot, ideally with extra pecans, coconut, or raisins sprinkled on top, and a generous drizzle of pure maple syrup.

Tips for Perfect Whole Wheat Carrot Cake Waffles

  • Don’t Overmix: Overmixing the batter can lead to tough waffles. Mix until just combined, even if there are a few small lumps.
  • Proper Waffle Iron Heat: Ensure your waffle iron is fully preheated for crispy exteriors. If your iron has a “ready” light, wait for it!
  • Avoid Overfilling: Too much batter can overflow and create a mess. Start with a slightly smaller amount and adjust if needed.
  • Keep Warm: If making a large batch, keep cooked waffles warm in a single layer on a baking sheet in a preheated oven at 200°F (95°C) while you finish the rest.
  • Make Ahead: Cooked waffles can be frozen for a quick breakfast later. Simply cool completely, then freeze in a single layer before transferring to an airtight bag. Reheat in a toaster or oven.

Serving Suggestions

These Whole Wheat Carrot Cake Waffles are fantastic on their own, but here are some ideas to elevate your breakfast or brunch:

  • Classic Maple Syrup: A warm drizzle of pure maple syrup is always a winner.
  • Cream Cheese Glaze: For an extra carrot cake touch, whisk together softened cream cheese, powdered sugar, and a splash of milk or orange juice.
  • Fresh Fruit: A side of fresh berries, sliced bananas, or chopped pineapple adds a burst of freshness.
  • Whipped Cream: A dollop of whipped cream or coconut cream makes for a decadent treat.
  • Yogurt Parfait: Layer waffle pieces with Greek yogurt and fruit for a deconstructed dessert-like experience.
  • Nut Butter: Spread a thin layer of almond or cashew butter for added protein and healthy fats.

Notes

This recipe typically makes about 10 standard-sized waffles, depending on your waffle iron.
