Ingredients for the Cinnamon Apples
- ½ Tbsp butter
- 2 medium apples (I prefer Gala or Fuji), diced
- 1 tsp cinnamon (divided)
- 1 Tbsp maple syrup
- 1-2 Tbsp water

- 1 ½ cup rolled oats (regular or gluten-free)
- 1 ¾ cups unsweetened almond milk (or milk of choice)
- 1½ tsp cinnamon
- 1 Tbsp maple syrup (more or less as desired)
- 1 tsp vanilla extract
- 2 Tbsp chopped walnuts or pecans
- 3 tsp chia seeds (optional)
- ¼ tsp Sea salt

- Dice apples into bite-sized pieces. (I leave the skin on but you can peel if desired.)
- Melt butter over medium heat in a skillet. Add apples and sauté for about 4-5 minutes to soften.
- Once apples are softened, add in the cinnamon, maple syrup, and water and stir constantly to allow the apples to become coated and most of the liquid to absorb–I like a little bit of sauce so I don’t let it all dissolve. Remove from heat and set aside.
- In a medium bowl, combine all of the oatmeal ingredients (rolled oats, almond milk, cinnamon, maple syrup, vanilla extract, chopped nuts, chia seeds, sea salt) and stir well to combine.
- Add in about ⅔ of the cooked apples and stir gently to combine with the oat mixture.
- Divide the mixture into 3-4 individual bowls/jars or into one large container that can be sealed shut. Spoon the remaining apples evenly over the top of the oatmeal jars/container.
- Refrigerate overnight or for at least 4 hours to allow the oats to soften and thicken.
- Enjoy warmed up or cold in the morning! You can add an extra splash of milk if desired if too much of the liquid has been absorbed and you prefer a thinner consistency.
