  • 1 lb Asparagus, trimmed and cut into 2-inch pieces
  • 10 oz. Spring mix greens
  • 1 c Spring peas, chilled
  • 8 oz. Burrata cheese, broken into pieces
  • c Pecans, lightly toasted if desired, or use candied pecans

For the Honey Citrus Dressing

  • 2 Tbsp Honey
  • 1/4 c Extra virgin olive oil
  • 1 tsp Dijon mustard
  • ½ tsp Garlic powder
  • 1 Tbsp Apple cider vinegar
  • 2 Tbsp Orange juice
  • 1 tsp Orange zest
  • ½ tsp Cracked pepper
  • Sea salt to taste

For the Sourdough Croutons

  • 2 c Cubed Sourdough bread
  • 2 Tbsp Extra virgin olive oil
  • ½ tsp Garlic powder
  • ¼ tsp Cracked pepper
  • ¼ tsp Sea salt
  • ½ tsp Dried parsley

  1. Preheat oven to 400°F (200°C). Line a baking pan with parchment paper for non-stick baking and easy cleanup.
  2. Rinse and trim the tough ends from your asparagus, then cut the spears into manageable 2-inch pieces. In a bowl, toss the asparagus with a small drizzle of olive oil, a dash of garlic powder, sea salt, and pepper to season. Arrange the seasoned asparagus evenly on one half of your prepared baking pan. In the same bowl (or a clean one), toss the cubed sourdough bread with olive oil, garlic powder, cracked pepper, sea salt, and dried parsley until well coated. Spread the seasoned bread cubes in a single layer on the other half of the baking sheet.
  3. Bake the asparagus and croutons in the preheated oven for approximately 12 minutes. Check for doneness: the asparagus should be cooked but still tender-crisp, and the croutons should be golden brown and crunchy. If you prefer your croutons extra crispy, you may allow them to bake for an additional couple of minutes, keeping a close eye to prevent burning. Remove from the oven and allow to cool.

Burrata can be hard to find sometimes, and I only have a couple of stores near me that sell it. It can be a touch pricey as well. Use fresh mozzarella instead if you would like! It will still be super tasty and offer a wonderful creamy texture to your salad.
