Essential Ingredients and Clever Swaps
Crafting these mouthwatering French Dip Sliders requires a handful of accessible ingredients that come together beautifully. Here’s a detailed look at what you’ll need, along with smart substitutions to suit your preferences or what you have on hand:
- Hawaiian Rolls: These sweet, soft, and slightly chewy rolls are the ideal foundation for sliders. Their interconnected nature in a pack of 12 makes assembly incredibly simple—just slice through the middle horizontally. The subtle sweetness of Hawaiian rolls perfectly complements the savory roast beef and rich au jus. If Hawaiian rolls aren’t available, any other soft slider bun will work; simply arrange them snugly in your baking dish.
- Roast Beef: Thinly sliced roast beef from the deli is our top recommendation for convenience and tenderness. Shaved roast beef is also an excellent choice, offering a delicate texture. While you can certainly slow-cook your own roast beef for an extra homemade touch, the ease and quality of good deli meat make this recipe a breeze.
- Provolone Cheese: This mild, semi-hard Italian cheese melts beautifully and adds a fantastic creamy layer. For a more adventurous flavor profile, consider using smoked provolone. Other excellent alternatives include Swiss cheese, known for its nutty notes, or the more robust Gruyère, which offers a sophisticated depth. Cheddar or Monterey Jack can also work if you prefer a sharper or spicier kick.
- Butter: Butter is a key player, used in three distinct stages of this recipe to impart rich flavor and moisture. Unsalted butter is preferred, as it allows you to control the overall saltiness of the dish. You’ll use it to caramelize the vegetables, brush the tops of the rolls for a golden finish, and enrich the au jus.
- Onions: Yellow onions are our go-to for their balanced sweetness when caramelized, which pairs wonderfully with the savory beef. White onions offer a slightly sharper flavor that mellows beautifully with cooking, or you could use shallots for a more delicate, nuanced onion flavor.
- Mushrooms: Sliced cremini (baby bella) or white button mushrooms add an earthy, umami depth to the sliders. Feel free to use your favorite variety. For a richer flavor, consider wild mushrooms if available.
- Thyme: Fresh thyme sprigs lend an aromatic, herbaceous note that enhances both the caramelized vegetables and the au jus. If fresh thyme isn’t accessible, dried thyme works perfectly as a substitute. If you don’t have any, the au jus will still be delicious, but thyme adds a lovely layer of complexity.
- Beef Broth: The foundation of our flavorful au jus. Low-sodium beef broth is highly recommended, as it gives you complete control over seasoning the final dipping sauce to your taste.
- Red Wine (Optional): A splash of dry red wine, such as Cabernet Sauvignon or Merlot, can significantly deepen and enrich the flavor of the au jus, adding a gourmet touch. If you prefer to omit alcohol, simply replace the red wine with an equal amount of additional beef broth.
- Worcestershire Sauce: This tangy, savory sauce is a secret weapon for the au jus, adding an incredible umami boost and complexity that you won’t want to skip. It’s often considered the favorite part of the dipping sauce!
- Garlic: Freshly minced garlic provides an indispensable aromatic base for the au jus. For convenience, garlic powder can be used as a good substitute, but fresh garlic offers a more vibrant flavor.
- Sugar (for onions): A small amount of sugar helps the onions caramelize faster and deeper, enhancing their natural sweetness. This is optional but highly recommended for achieving that perfect rich, golden-brown color and flavor.
- Coarse Sea Salt: A sprinkle of coarse sea salt on the buttery tops of the rolls not only adds a beautiful texture but also a subtle burst of savory flavor, elevating the overall experience.
How to Make These Roast Beef Sliders: A Step-by-Step Guide
Making these French Dip Sliders is a straightforward process that yields incredibly delicious results. Follow these steps for perfect, golden-brown sliders with a rich, savory au jus.
Caramelize the Onions and Mushrooms:
The secret to incredibly flavorful French Dip Sliders starts with perfectly caramelized onions and mushrooms. This step builds a foundational layer of savory sweetness:

Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sliced yellow onions and mushrooms to the hot butter. Sauté, stirring frequently, for about 3-4 minutes, or until the onions begin to soften and turn translucent. At this point, sprinkle in the thyme (fresh or dried), sugar, and salt. Continue to cook, stirring every couple of minutes, allowing the onions to slowly caramelize and develop a rich, deep caramel color. This process might take an additional 8-12 minutes. Once beautifully caramelized, remove the skillet from the heat and set aside.
Assemble the Sliders:
With your caramelized veggies ready, assembling these sliders is quick and easy:

Preheat your oven to 350°F (175°C). Take your Hawaiian rolls and carefully slice them horizontally in half, ensuring all the rolls remain connected. Place the bottom halves of the rolls into a 9×13 inch baking pan or a large casserole dish, forming an even layer. Next, arrange the thin slices of roast beef over the bottom rolls. Follow with a layer of provolone cheese, then spoon the caramelized onions and mushrooms evenly over the cheese. Finally, position the top halves of the Hawaiian rolls back over the fillings. In a small bowl, melt 2 tablespoons of butter and generously brush it over the tops of the rolls, ensuring they are completely covered. For an extra touch of texture and flavor, sprinkle a bit of coarse sea salt over the buttered tops, if desired.
Bake to Perfection:
Loosely cover the baking dish with aluminum foil. Bake the roast beef sliders for 15 minutes, or until the cheese is beautifully melted and gooey. Remove the foil and continue to bake for another 5-7 minutes, allowing the tops of the buns to become golden brown and lightly toasted. Keep a close eye on them during this uncovered baking stage to prevent over-browning.
Prepare the Savory Au Jus:

While the sliders are baking, you can prepare the aromatic au jus. Using the same skillet where you caramelized the onions and mushrooms (no need to clean it – those browned bits add extra flavor!), melt the remaining tablespoon of butter over medium heat. Add all the other au jus ingredients: beef broth, Worcestershire sauce, minced garlic, and the remaining thyme. Whisk everything together until well combined. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, allowing it to slightly reduce and for the flavors to meld beautifully. Taste and adjust seasoning with sea salt as needed. Once ready, transfer the au jus to a small bowl for dipping.
Serving Instructions:
Once the sliders are cooked and out of the oven, allow them to cool for about 5 minutes before slicing. This brief resting period helps the cheese set slightly and makes for easier, cleaner cuts. Slice them apart into individual sandwiches for convenient serving. Garnish with a sprinkle of fresh chopped parsley if you like, and serve immediately with the warm au jus on the side for dipping. Enjoy!

Chef’s Tips for Perfect French Dip Sliders
Achieving perfectly gooey, non-soggy sliders is easier than you think. Here are a few expert tips to ensure your French Dip Sliders turn out incredible every time:
- Preventing Soggy Buns: The key to avoiding soggy slider buns is strategic cheese placement. Always add a layer of cheese directly onto the bottom roll and another layer on top of your fillings. This creates a protective barrier, preventing moisture from the meat and vegetables from soaking directly into the bread. Additionally, if you opt to use roast beef that has been cooked in its own juices (rather than deli roast beef), ensure you thoroughly drain any excess liquid before layering it onto the rolls. Less moisture means perfectly toasted buns!
- Make-Ahead & Reheating Instructions: These sliders are fantastic for meal prepping! You can assemble and bake them within 3 days of preparation. To reheat, simply place them in a foil-covered dish and bake at 350°F (175°C) for approximately 8-10 minutes, or until warmed through and the cheese is re-melted. For a quicker option, individual sliders can be microwaved for about 45 seconds; however, microwave times can vary, so keep a close eye on them to prevent them from becoming chewy.
- For Deeper Caramelization: Don’t rush the onion and mushroom caramelization process. Low and slow is the way to go. Allowing them to cook patiently over medium heat will draw out their natural sugars, resulting in a richer, sweeter, and more complex flavor.
- Optimal Au Jus Reduction: The au jus should be flavorful and slightly thickened, not watery. Simmering it for the recommended 10 minutes allows it to reduce slightly, concentrating the savory notes. If you find it too thin, you can continue to simmer for a few more minutes, or if too thick, add a splash more beef broth.
Creative Variations to Customize Your French Dip Sliders
One of the best things about these roast beef sliders is how adaptable they are. Feel free to experiment with these delicious additions and variations to suit your taste:
- Add Sautéed Peppers: For an extra layer of flavor and color, toss some thinly sliced bell peppers (any color works!) into the skillet when you’re cooking the onions and mushrooms. They add a lovely sweetness and a hint of crunch. If you’re not a fan of onions, you can even omit them entirely and just sauté peppers and mushrooms for a delicious alternative.
- Mayo or Mustard Kick: If you enjoy condiments as much as we do, consider spreading a thin layer of your favorite Dijon mustard, grainy mustard, or a creamy mayonnaise (or even a garlic aioli!) onto the bottom rolls before adding the fillings. This adds an extra zesty or rich dimension that complements the roast beef beautifully.
- Zesty Horseradish Spread: For those who love a bit of a kick, horseradish is a fantastic addition. You can slather a creamy horseradish sauce onto the rolls for a pungent, spicy bite, or simply serve a dollop on the side for guests to add as they please. It’s a classic pairing with roast beef for a reason!
- Change Up the Cheese: While provolone is traditional, feel free to get creative with your cheese choice! We’ve already mentioned Swiss or Gruyère for a more sophisticated taste. But you could also opt for sharp cheddar for a bolder flavor, American cheese for ultimate meltiness, or even pepper jack if you desire a subtle spicy warmth. Any cheese that melts well will work!
- Garlic Butter Topping: Enhance the buttery topping by mixing a half teaspoon of garlic powder or a clove of minced fresh garlic into the melted butter before brushing it over the rolls. This adds an extra layer of savory aroma and flavor that’s simply irresistible.

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
Servings: 12 sandwiches
Ingredients
Sliders:
- 12 Hawaiian rolls
- 3/4 lb deli roast beef, thin sliced
- 6-8 slices provolone cheese
- 2 T butter, melted
- ½ tsp thyme (dried)
- Coarse sea salt, optional
For the Onions and Mushrooms:
- 1 yellow onion, sliced
- 8 oz mushrooms, sliced
- 2 T butter
- 1/4 tsp salt
- 1 tsp sugar (optional)
Au Jus:
- 1 T butter
- 1 1/4 c beef broth
- 1 T Worcestershire sauce
- 1-2 garlic cloves, minced
- 1/2 tsp thyme (dried)
- Sea salt, to taste
Instructions
Caramelize the Onions and Mushrooms:
- Melt 2 tablespoons of butter at medium high in a skillet. Add the onions and mushrooms and sauté for 3-4 minutes until the onions soften and start to become translucent. Sprinkle the sugar, salt and thyme over top and continue to heat, stirring every couple minutes until the onions become a rich caramel color. Remove from heat.
Assemble the Sliders:
- Preheat the oven to 350°F (175°C).
- Slice the rolls in half horizontally, keeping them attached to each other. Add the bottom halves of the rolls to a 9×13 inch baking dish. Layer the roast beef, then the provolone cheese, and top with the caramelized onions and mushrooms. Add the top layer of the Hawaiian rolls. Brush generously with the 2 tablespoons of melted butter, covering the tops completely.
- Loosely cover with foil and bake for about 15 minutes, or until the cheese is melted. Remove the foil and bake another 5-7 minutes, or until the tops of the rolls are toasted and golden brown.
Prepare the Au Jus:
- While the sliders bake, add the remaining tablespoon of butter to the skillet used for the onions and mushrooms. Melt over medium heat. Add all the other au jus ingredients (beef broth, Worcestershire, minced garlic, thyme) and whisk to combine. Simmer on medium heat for about 10 minutes, allowing the sauce to slightly reduce and flavors to meld. Taste and adjust seasoning with sea salt as needed. Transfer to a bowl to serve.
Serving Instructions:
- When the sliders are ready, allow them to cool for about 5 minutes before slicing. Slice to separate into individual sandwiches for easier serving. Sprinkle with chopped parsley if desired and enjoy warm with the au jus.
Notes
- To keep the buns from getting too soggy: Add the cheese first and last so that it is the only layer that touches the bread. Also, if you decide to use a roast beef that has been cooked in juices versus deli roast beef, make sure to drain as much of the juices off before adding to the rolls.
- Reheating Instructions: You can bake these within 3 days of cooking. Bake at 350°F in a foil covered dish for about 8-10 minutes. You can also microwave them if desired for about 45 seconds – this will vary based on your microwave so keep an eye on them.
